Cider House Collection #2: Inspired by the tradition of Ice Ciders in Quebec, Canada, Iceman uses the process of freezing the juice from culinary and bittersweet apples to produce a rich, complex and unique cider with a crisp apple taste and notes of caramel and toffee. This cider is sweet but not cloying. The addition of oak-aging yields a smooth and pleasing vanilla character. The result is a perfectly balanced, full-flavored cider that delights the palate with clean apple notes and a lingering toffee finish.

750ml bottle pours a clear orange with zero head. Nose has apples... apple juice... and not much else. Flavor has apples... and apple juice... and not much else. Not much happening.

Pours clear, bubbly, rich gold with a slight white ring.... Aroma is sweet, strong, apple and peel. Flavour is a remarkable reproduction of a caramel apple. Rich, sweet, smooth... Immensely tasty.. Thank you, QueenHolly and Shrubber for the share!

Bottle. Sweet caramel apple aroma. Clear brassy gold, no head per usual for cider. Intense sweet tart apple and caramel flavor. Full slick body, soft carbonation.

Bottle poured into a shaker. Ppurs a clear dark gold with lots of little bubbles. Aroma is mostly sweet and tart apples with a hint of toffee and a little vanilla. Taste goes back and forth between heavily sweet and heavily tart. Apples and apples with candi sugar, light vanilla, light oak and a little toffee. Thick and sticky texture with a finish that gets more boozy as it warms. Overall, really good. Ive never had an ice’d cider before but im really digging this style.

Bottle. Pours with a deep orange hue, perfectly clear and carbonated. White ring, some lace, some legs. Tannic and lightly sulfuric aroma. Sweet apple, lightly yeasty/bready with some zesty acidity. Flavors are sweet and slightly out of balance. There is some acidity (even strong) but it is still cloying at this strength. Some tannin, some oak, baked apple and lemony acidity. Peppery alcohol burn, but miles too sweet for any balance. Low carbonation, with a fuller body.

750 ml corked and caged bottle. Pours still, clear deep old gold. Aroma is of wet dog, apples, leather, fresh chopped wood; not very aromatic. Taste is nice, tart and savory, finishes dry and bitter. Alcohol is noticeablely strong, but it doesn’t taste 10%. Carbonation is fairly soft, mouthfeel is slick. It’s good, but maybe not as good as I was expecting.
