Apiary was brewed with New Jersey grown and malted barley and buckwheat with the addition of New Jersey blueberry blossom honey. We used a traditional step mash to drive a crisp, dry profile, balanced by the bittering addition of aged whole leaf noble hops. Apiary presents with a honeycomb aroma balanced by a dry fermentation and high effervescence. The extended conditioning time pushes aromatics of hay and light funk, grapefruit, spice, toasted brioche and honey.

From tap. Pours hazy orange with a small white head. Aroma is estery and mild spiced. Bitter, estery, spiced and slight soapy. Bitter and slight herbal. Dry and bitter finish.

Bottle shared by Max at the RBWG Grand tasting, thanks! Pours a hazy yellow with a white head that dissipates slowly ot the edges. Aroma has a bit of honey with some sweet fruit, light bitterness, citrus and a hint of flora. Flavor has more of a grass and citrus note with a bit of flora and light fruits.

Bottle at RBWG Asheville Grand Tasting. Pours hazy yellow with a bubbly white head. Nose has some citric lemon tang, pale bread. Light sweet flavor, slight funk, dry dough, melon and lemon. Light bodied with fine to average carbonation. Pretty clean to finish, mild tangy citrus, some funk, straw, pale dough. Nice beer.

Bottle shared by jcwattsrugger: Poured a hazy yellow to orange with white head. Nice funky aroma with hints of floral and honey. Nice smooth citrus feel that I think comes from the honey, some spice undertones, and a dry rye finish.

Location: 750 ml bottle from Hoboken Vine, 12/7/13

Aroma: The nose is yeasty, with some grains, straw, tropical fruit, a little honey, and grass
Appearance: A hazed yellow-gold color with a large, thick, frothy white head and coating lace
Flavor: The flavor is very balanced with a nice mix of yeast, spice, funk, honey, and grass
Palate: The feel is smooth and clean with a soft-to-average carbonation, and a clean, dry finish
Overall Impression: This is a really nice saison. The use of honey accents the beer, but doesn't overpower is with sweetness. It has a nice, clean funkiness that also doesn't overpower the underlying beer. All in all, it is very well balanced and very drinkable.

Bottle from the source. Hazy golden yellow color, huge white ice cream cone head with good retention and spider web lacing. Aroma of dusty conwebs in barn corners. Taste is funky raw white bread dough, light spice, black and white pepper. Very tasty.

Bottle. Pours old gold with white head. Nose and taste of wild honey, lemongrass, lemon and citrus peel, orange zest and toasted grain. Medium body.
