After pressing for our traditional ciders, the leftover apples, or pomace, are rehydrated and refermented. The result is a delightfully low alcohol, sparking cider called piquette!

Asian Pears/Heritage Apples/Quince

Brown 750ml via Press online. Week in the fridge. Maybe not enough time for it to fully settle.

Lo-ball glass at home. Quick soda head. over a half-hazy pale gold straw pour. Spritzing all over my glasses.
Funky, sour & vinegary floral nose.
Twangy apples, dusty pear, sour pineapple, floral, a tad yeasty. Vinegar & light funk kept in check.
Thin, spirited carb, very acidic burn, medium-low tartness, powdery texture on the finish.

Solid complexity for something made from leftovers.
