Nel caso della Hopped Ink Barrel Aged abbiamo pensato di farla riposare in botti di rovere che un tempo contenevano sagrantino e amarone. Non avremmo potuto fare scelta migliore. Bottiglia, BBE 01/2019 e bevuta 6/2020. Al naso l'aroma rimanda a pane nero, orzo tostato, caffè, cioccolato e affumicato. L'olfatto viene stimolato in maniera elevata e il modo in cui permane è apprezzabile. Il cappello di schiuma color marrone castagno resiste abbastanza. La grandezza delle bollicine è a grana fine. Il colore è come l'inchiostro nero. Il corpo è strutturato. Il dolce è medio in buon equilibrio con l'amaro medio. La forza gustativa è elevata. La continuità gustativa è buona. Il gusto è piacevolissimo. Le sensazioni boccali finali risultano di birra beverina e di pericolosa beverinità. Il retrogusto è intenso. In bocca l'aroma è quello di caramello, miele, cioccolato fondente, caffè, liquirizia, nocciole tostate, pane tostato e agrumi.

Draft at Hoppy Days. Pours near black with a thick beige head. Aroma of massive medicinal hospital peat monster, Brett, burnt malts, soy, licorice, molasses, chocolate and leather. Flavour is moderate to heavy sweet at bitter. Full bodied with light carbonation.

On tap at Hoppy Days, first glass from the keg. Black colour, beige-brown head. Aroma of clear Brettanomyces, like a cinnamon fart, wood, hard-roasted malts, ink (not just suggestion), leather, tar. Flavour is medium sweet, Brettanomyces, cinnamon, wood, light booze, ink, leather, heavily roasted, firm bitter finish. Medium-bodied. Not sure if the Brett is supposed to be there, but it’s nice anyway.
