Cuvée Sofie is the barrel aged version of Phi. Complex, refined flavours, originating from the tannins of the Bordeaux barrel and the wine that initially filled it create a soft, refreshing sipping beer that blurs the differences between beer and wine.

Bottle from Speciaalbierpakket. Abv 8%. Juicy tart fruity aroma with citrus, apricot, soft oak, lemon, some bready malt, and yeast. Flavour is tart and rather sour, nicely puckering, with a dry finish. Body is medium. Nicely fruity and quite sour, excellent puckering juice.

Lol, this is "blonde"? Pretty dang sour, but then again my tongue was half destroyed from too many salt and vinegar chips.

On tap at Ambasada, Zagreb as 8% version. Shared with Marko. Clear amber, minimal head. Soft fruity notes, along with lacto. Soft yeasty notes, funky, marmite. Dried fruit, rye bread. Fruit jam. Prickly acidic note, yeasty, bready. Moderate sourness. Light body, soft carbonation. Slightly oily. Sweetness, but also quite sharp sourness. Dried cherry, cranberries.

Tap at Ambasada, 8%. Hazy coppery-amber body, no head. Funky, mildly bretty, somewhat acetic, fruity notes. Lean dry taste, fruity, lightly lightly malty, sharp acetic, vaguely fruity, mostly lactic taste, vaguely minerally, vague glue. The sourness sticks to the tongue. Not bad, nice, not great.

Bottle from Hopduvel. Hazy amber, small, off-white head. Aroma of unripe red apple, apricot, ripe nectarine, sour grape, damp furniture, old library with fitted carpet, cheese, sour cream, carré confiture. Taste has sour red apple, lemon, grape & nectarine stone complemented by funky cheese & sour cream for a lactic acid effect; funky sourdough in balance with sweetish brioche-like maltiness. Dry, very tart finish, vague herbal hops, woody tannins, ongoing stone fruit's stone & lemon flesh acidity, softly warming white wine-like alcohol. Medium body, oily texture, average carbonation. Beautiful.
