A sturdy farmhouse-style ale that showcases a yeast from northern France, along the Belgian border. The earth and spice notes as well as the citrus fruit character are yeast driven. The balance and complexity of the aroma will change as the beer warms in your hand. Medium bitterness, and honey-ish malt with a semi-dry finish.

Sample at Industry Night at HomeBrewCon. Lightly fruity earthy spicy with lots of banana in the nose and flavor. Light sweet honey maltiness rounds this out nicely, but I wanted more pepper less fruit.

4 oz draft pour at Mad Fox on 7/14/2014. Clear straw yellow with off-white head. Aromas of citrus fruit and peel, herbs, spices. Tastes of citrus fruit and peel, funk, lemon, spices, floral notes. Medium body with a dry finish. Medium-low carbonation.

Tried the Galactic Funk version on 8/25/2014 which is the saison on cask dry hopped with Galaxy. The Galaxy adds a nice fruitiness to the taste.

With s name like this, it ought to be a sour. Instead its a havily hopped (I think with citra) saison that has far more lemon flavor than saison funkiness. Earlier Rating: 2/27/2012 Total Score: 3.4Draft at the source. Murky variegated golden brown color, thick white head. Aroma of orange peel and white bread. Taste is orange with moderate spice. OK.

Tried the base beer right from the fermenter while on a tour at the brew pub. Pours a hazy, bright gold with some very frothy white head. Nose has a big white grape character, yeasty, green apple, light lemon, a little candy sugar. Flavor has more of the tart but sweet white grape, some candied lemon peel, a little lime, some yeast, grass, light spice. Medium bodied, dry finish. I thought this would take very well to some barrel aging (Chard barrels?). I also had the opportunity to try a version hopped with Citra, a version hopped with Galaxy, and a version dry hopped with wet Citra hops. All three versions were nice, with the Galaxy version being my favorite.

Served on draft at the brewpub on 6/10/11. Pours a hazy orange color with a thin creamy head. Decent head retention and lacing. Lots of citrus, bread and spice notes with a bit of apple. The taste is bread with lots of citrus, faint spice and a faint hoppy finish. Medium-full bodied.

Brewpub goblet ($3.50hh): Pours a hazy yellow with a white head. Aroma is fruity, spicy, anise stands out. Taste has good mild hops. Anise flavor is there and I think that it is done well (a lot of beers don’t do it as well as this... Gouden Carolus Xmas I’m looking at you). Body is crisp. Taste is a bit sweet. Plenty to taste in this beer, and I think that this was my favorite at this joint. Worth a try by all.

Location: Draft at the Brewpub, 6/10/11

Aroma: The nose is fairly sweet, lots of yeast, some citrus fruits, and some crackers/bread too
Appearance: The pour is bright orange, like someone spilled a highlighter, thin bright white head
Flavor: The taste is rather sweet too, some honey, lots of yeast/bread, finishes earthy and tangy
Palate: Really drinkable, subtle fizziness, medium body (leaning light), slight dryness on the finish
Overall Impression: This one is highly drinkable stuff, you could kill this one pretty quick and hardly notice you were doing so. A good first impression from a brewpub, as this was the first beer I tried there.

On tap at the brewpub. Aroma was yeasty, fruity, spices. Great spice character on this one. Flavor was a bit tart, sweet, spices (cloves). As it warmed, notes of lemon and grapefruit came out.
