Dubblel brewed with Molasses and Spices (Smokestack Series)
The Nommo are ancestral spirits worshipped by the Dogon tribe of the West African nation of Mali. The name is derived from a Dogon word meaning ‘to make one drink.’ No, really. Nommo, usually described as amphibious, hermaphroditic, fish-like creatures, were created by the sky god Amma, who caused them to multiply by splitting them into doubled sets of twins. Seeing a trend here? Maybe it’s farfetched, but we think the story of the Nommo makes this whole enterprise a little more fun and interesting.
Our Nommo has a brilliant deep amber color and a sweet caramel malt profile. This beer showcases the coriander, cinnamon, and star anise used in the kettle, complementing them with clove and banana notes contributed by the Belgian yeast. The rich complexity of Nommo’s flavor makes it a worthy partner to a variety of meats and game, as well as aged or aromatic cheeses.

Bottle shared in Canaan, NH. Vintage 2011. Pours clear amber-brown with a creamy tan head. The nose has some toast bread, creamy caramel, burnt leaves. Medium to heavy sweet flavor, some ripening berries, mild alcohol, leaves, toffee. Medium to full bodied with average massaging carbonation. Lightly warming to finish, some burnt grains, earth, toffee. Good stuff.

Poured from a bottle and shared it is a muddy brown with an ecrue head

From a 75 cl bottle shared in Avon, NC. Pours a hazy brownish amber with an ecru head. Aroma of caramel and cinnamon. Flavors herbal flavors with a touch of licorice. Medium bodied, highly carbonated, crisp and effervescent finish.

Refrigerated corked and capped 75 cl brown bottle poured into a trappist glass. Pours translucent dark amber with medium brown/reddish hues and medium fluffy beige head. Aroma is dark candy sugar, medium body, medium carbonation, and nice big bubble lacing. Taste is dark candy sugar spice (mostly cinnamon), a little anise, and some dark fruit. The spices don’t add anything positive from my perspective, I prefer several other dubbels.

Pours cloudy mahogany. Nice head and some lacing. Smells of molasses. Carbonation slightly below average, nice for style. Molasses smell increases as beer goes down. Finishes with light sweetness. Nice. Thanks to Steve for sharing.

Lightly hazy dark amber - fizzy carbonation/lace - nose is fairly sweet, with notes of raisin, toffee, dark bread, light cinnamon and faint clove - rather high in abv for the style - the thin/watery body and texture just make it all the more apparent just how strong it is, too, letting the alcohol come through too much - flavors of overripe dark fruits, light melanoidin character, clean but high sweetness - dries out slightly through the middle as mild earthy phenols and strong spiciness come to the fore - finish is moderately spicy, with a lot of lingering alcohol heat - not exactly unenjoyable, but kind of messy.

Bottle: Poured a mahogany to dark brown with a off white tan colored head. Aroma was dark fruit with some spice. The taste was dark fruit with more spice and sweet caramel malt. Very sticky in the finish.

750 ml bottle into chalice, best before 4/2012. Pours slightly hazy dark red color with a nice 2 finger fluffy khaki head with good retention, that reduces to a nice cap that lingers. Slight foamy lacing clings to the glass. Aromas of raisin, caramel, prune, molasses, toast, herbal, clove, earth, pepper, and yeast spices. Very nice aromas with good balance and complexity. Taste of big caramel, molasses, prune, raisin, toast, toffee, biscuit, clove, earth, nuttiness, and yeast spices. Lingering notes of caramel, molasses, raisin, toast, biscuit, clove, nuttiness, earth, and yeast spices on the finish for a good bit. Great balance and complexity of flavors; no cloying sweetness at all, fairly clean on the finish. Medium carbonation and body; with a fairly slick and lightly prickly mouthfeel that is nice. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is an excellent dubbel! Great flavor complexity and balance; very smooth and easy to sip on. Very enjoyable stuff.
