This beer has a generous head compact and firm. Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St-Feuillien Cuvee de Noel has a very subtle bitterness that is the dominant flavor in this harmonious ale that strikes a perfect balance between all the different ingredients.

Dark red to brownish, a bit hazy/cloudy. Relatively big sized head, the slightest off-white, quite compact. So so retention, moderate lacing. Average intensity in the aroma: caramel malts with a bit of yeasty, dough-like feel to them, the slightest earthy hint, a hint of dark fruits, quite strong licorice, a touch of herbal/balsamic freshness. Taste notes follow the aroma closely, with good enough definition and intensity. Licorice taste is indeed pretty strong (not overwhelming but a tad too dominant in my opinion) and feels slightly artificial. Alcohol is very lightly perceptible, the beer gives a light warming feel. Quite sweet in taste, balanced enough in a decently dry finish and aftertaste, mainly thanks to a bit of herbal freshness/bitterness. Overall taste impression: quite tasty and satisfying enough but not that refined. Medium to dense body with average or slightly above average, soft carbonation; feels quite full and slightly creamy. Overall pleasant but far from impressive.

Pour is a dark murky brown with a large tan head. Aroma is dark fruit and spices. Flavor is dark fruit, anise and brown candi sugar. No alcohol is felt but this warms you in all the right places. Finish leaves some molasses on the tongue as this goes down. Decent Belgian winter ale, not the best but still pretty good with a mix of spice and sugary malt.

Keg at The Dovetail, Farringdon, the one new rate on works Xmas piss up, 08/12/23. Had this in Belgo land back in the day so nice to catch up. Hazed mahogany brown with a good sized lasting beige head. Nose is liquid fruit cake, spice, herb, figs, dates, toffee, brown bread. Taste comprises fruit cake, light winter cheer, herb, toffee, clove, spice, dates, brown sugar dusting. Medium plus bodied, fine carbonation, semi drying close with a balanced cloak of alcohol. Solid sipper ... the Belgo's know how to lay down an Xmas bier!
