This ain’t your Grandaddy’s wheat ale! We embrace the crazy things that some other breweries will not speak of. All the "bugs and critters", as we say, go bonkers in the mash tun creating a sour mash. Similar to making yogurt and sauerkraut, a controlled temperature allows lactic acid creating bacteria to create a souring effect. We boil to politely "remove" the little guys. Refreshing, delightful, tangy, and just plain wonderful! (It’s OK to not like this one, at least you tried it!) Oh, and locally grown (Sossman Farms) Sonoran White Wheat is at the heart of this beer. Drink Local!

Pours hazy yellowish with a tiny head. Aroma of wheaty notes, lemon, citrus, lactic sourness and yeast. Taste is smooth, sourish and slightly lactic. Finish is smooth, sourish and tart with some lactic yeastiness and lemony notes. Pretty smooth and balanced.

From tap. Pours cloudy yellow with a small white head. Toasted malty, slight citric, fruity and toasted malty. Lingering fruity and mild citric into the finish. Smooth, citric and grainy finish.

Reviewing from notes at Great Nebraska Beer Festival. Aroma has a nice grainy, wheat character with some moderate lactic acidity and some nice lemon notes. Pours a rather clear, very pale, straw color with a big, rocky, white head that recedes somewhat quickly. Flavor has a nice wheat note and a touch of grain with moderate acidity. Some light citrus notes. Mouthfeel is light bodied with light carbonation. Low astringency and low alcohol warmth. Overall, a nice clean Berliner on the lighter side of the Berliner spectrum. This had the malt character that I thought the raspberry berliner from Destihl was lacking.

Second Batch. Poured up on tap at Wilderness where it has . . . here we go, yes! It has a totally opaque murky pale straw sort of grapefruit juice look to it with a thin white head on top. I love the look of this. Yummers. The aroma offers up funky sweaty socks mixed with moderately sharp notes of lemons and where tiny murmurs of malts are noticed once in a while. The funky and acidic citrus aroma are pretty deep and involved. The taste starts punchy and a bit sharp with lemon citrus to start. As the lemon sourness peaks breadiness and a lovely funky dirty sweaty sock note helps to create a funky orange juice sort of sensation. Wow, this is crisp and punchy and loaded with flavor going in all directions creating a nice refreshing balance. Love it. What a great hot weather beer for the Valley of the Sun. Long overdue.
