This ain’t your Grandaddy’s wheat ale! We embrace the crazy things that some other breweries will not speak of. All the "bugs and critters", as we say, go bonkers in the mash tun creating a sour mash. Similar to making yogurt and sauerkraut, a controlled temperature allows lactic acid creating bacteria to create a souring effect. We boil to politely "remove" the little guys. Refreshing, delightful, tangy, and just plain wonderful! (It’s OK to not like this one, at least you tried it!) Oh, and locally grown (Sossman Farms) Sonoran White Wheat is at the heart of this beer. Drink Local!

Keg at Cafe Behemoth. It pours hazy yellow - gold with a small white head. The aroma is fresh, bright, quite clean, lemony, lime, sherbet, lactic, lemonade, white sugar and candy. Medium body and fine, prickly carbonation. Good contemporary example of the style. Fun.
