Derivation is our series of Barrel-Aged Imperial Stouts in which we brew several recipes, age them in a variety of barrels and blend them before bottling to add depth and structure to this massive style of beer.
Blend #3 is an imperial stout with a touch of rye aged in two-year Willet Rye Barrels for one year.

Draught at RateBeer Best festival. Opaque black liquid with small to medium tan head. Aroma of raw sugar, chocolate, bourbon, dried fruit and light vanilla. Taste is high sweet and light bitter with notes of raw sugar, chocolate and bourbon. Full bodied with low carbonation and sticky mouthfeel. Great. Very nice and complex.

On tap at Ratebeer fest. Aroma is nice with some strong dark chocolate notes. Medium roast with some tobacco and ash. Moderate coffee with a bit of vanilla. Some light dark fruit notes. Pours an oily black with no head. No lacing and sheets of alcohol. Flavor is very sweet with some nice chocolate notes. Some light marshmallow and vanilla notes. Light coffee and medium light roast. Hints of ash and tobacco. Medium light dark fruit notes. Some light alcohol spice. Mouthfeel is full bodied with medium low carbonation. Low astringency and low alcohol warmth. Overall, a nice big, sweet stout. Very rich, with layers of flavor. Aroma has more roast and ash notes while flavor has more dark fruit.
