Derivation is our series of Barrel-Aged Imperial Stouts in which we brew several recipes, age them in a variety of barrels and blend them before bottling to add depth and structure to this massive style of beer.

Blend #3 is an imperial stout with a touch of rye aged in two-year Willet Rye Barrels for one year.

Bottle @ Himmeriget. Pours pitch black with a tiny brown head. Aromas of vanilla, dark fruits, spicy rye, cinnamon, fudge, light booze. Taste has milk chocolate, light rye, vanilla, plums, dates, toffee, butterscotch light coffee-like roasty notes. Fuck this is good.

Himmergiet. Bottle. Fucken huge thanks to Djd07 and his connections! Oily black beer, no head. Smooth palate, modest fine carbonation. Soft rich dark malts, smooth dark chocolate, smooth dark malt cream. Touch of Port Wine red berries. Smooth as a baby's arse bourbon barrel. Smooth vanilla. Wonderfully smooth fruity bourbon. Mild vanilla. Smooth finish. If there was a little more carbonation, this would be right up there for me.

(Bottle sample @ Himmeriget, Copenhagen, Dec 16/17) Pours a deep oil black with no head at all. Aroma is hefty and rich, with notes of fudge, dark chocolate, soft burnt roast, vanilla, peppery whiskey, a little dark plummy fruit. Flavour is rich, smooth and rather sweet, with mouth-filling fudge, dark toffee, molasses, chocolate, stewed fruit, barrel bringing notes of vanilla, smooth but slightly spicy whiskey, slightly burnt wood but the roast is rather limited. Finish is semi-sweet and blends dark fruit with toffee and the barrel, lightly toasted. Basically no alcohol. Full bodied, viscous and nearly flat. I thought this was beautiful as a sipper, more than a small pour might become cloying. As it was, lovely integration of barrel and a banging adjunct-free stout.

Bottle@Himmeriget, Copenhagen - Black pour with tiny tan head. Dark roasted and sweet malty with resonating chocolate and caramel sweetness, slight toffee, dark fruit, brown sugar, dark dried fruit shred, some bourbon soaked wooden accents into the finish.

Small brown shortlasting head, thick black pour. Aroma is slightly dry sour-ish boozy, oak, minerals, dark malts, booze, raisins, bark, hay, bourbon, sour dark fruits, butterscotch, dark sugar, fruit stones. Taste is rich and sweet velvety, dark sugar, raisins, dark malts, minerals, oak, sweet bourbon, butterscotch, even more dark sugar, dates, vanilla. Medium bitterness, sweet syrupy mouthfeel. Nice, but it's like drinking diabetes. And some years in the cellar would probably be better...

Keg at Ratebeer Best Beer Festival. 31/01/2016. An oily caramel brown coloured pour with a small tan head. Aroma is nice toasted coconut, vanilla oak, tart grapey vinous fruits. Flavour is composed of smooth toasted malts, black cherry, grapey fruits, chocolate and black forest gateau. Palate is oily, soft moderate carbonation. Nice.

Bottle 750ml. shared at [ A Day To Sink All Sea Shepards tasting. ], Brussels, Belgium. [ As Side Project Derivation Blend #3 ]. [ Green Wax ]. Clear dark black brown color with a small, fizzy, virtually none lacing, fully diminishing, beige head. Aroma is light heavy malty, sugary, roasted, chocolate, molasses, coffee, sweet malt, alcohol. Flavor is heavy sweet and moderate bitter with a long duration, sugary, sweet malt, dark malt, roasted, molasses. Body is medium to full, texture is oily, carbonation is soft. Bottle shared at A Day To Sink All Sea Shepards tasting. Full lineup of 1-6 + DB. Black with a ring tan head. Aroma of bourbon, vanilla, caramel, molasses, chocolate, big boozy barrel and light woody notes. Flavour is heavy sweet, sweeter than the others. Full bodied with a thick texture and soft carbonation.

750 ml bottle shared at the original Chez Moeder Lambic’s cellar. Thanks Anton! Black color with beige brown head. Malty aroma, roasted, caramel, chocolate, dark dried fruits, some soy sauce, wood, alcohol. Moderate sweet and light bitter taste. Almost full silky creamy body with soft carbonation.
