Derivation is our series of Barrel-Aged Imperial Stouts in which we brew several recipes, age them in a variety of barrels and blend them before bottling to add depth and structure to this massive style of beer.

@ A day to sink all seasheppards. Thnx for sharing, everyone !! Pours black, no real head. Smell is sweet, much dark malts. Taste is sharp, full, boozy, dark grains. Bit bitter.

Draft at RateBeer Best 2016. Pours black-brown with a creamy tan head. The nose holds lightly tangy burnt wood, rich roast, dark chocolate. Heavy sweet flavour with lots of dried fruits, chocolate, moderate roasty and earthy bitterness. . Full bodied, chewy, with fine carbonation. Lightly warming on the finish with sugary chocolate and dark fruits. Big stuff. Decadent and hugely enjoyable.

Keg at RB Best Festival, 31/01/16. Black topped with a dirty tan head. Nose is rich malt, fruit cake, toffee fudge, chocolate, light spice, trace of wood. Taste comprises rich fruit cake, raisens, chocolate, coffee, light charr, spice, subtle barrel tones. Full bodied, fine carbonation, light warming booze in the close. Solid impy, well nuanced and subtle on the barrel.

[1/31/16] Draught sample at RateBeer Best festival in Santa Rosa. Black, viscous. Big whiskey, vanilla, chocolate, cookies. Sweet, rich, dessert-like, bitter finish, slightly boozy. Full-bodied. Wonderful.

Side project derivation - Dark roast, a bit of booze and dark chocolate. Deep jet black with a small brown head. Molasses, touch of barrel and booze with a rich finish. Obscene rich mouthfeel.

On tap at RateBeer best. It pours a black color with a very small brown head. The aroma is big, rich chocolate fudge, whiskey and some barrel spice. The flavor is also very whiskey forward, a bit boozy with some notes of port, chocolate and some spicy rye notes before a barrel spicy, bitter, roasted finish. Very rich and complex. Booze, rye, fudge and barrel. Good stuff.

Pour @ RateBeer Best Festival. Black appearance with a brown head. Aroma has whiskey, anise, dark fruit, chocolate, oak, and some tannins. High, high boost. Boozy going down the hatch. Not way overly sweet and pretty well balanced. Belgian chocolates, licorice, prunes, oak, and whiskey in the flavor. It wasn’t my favorite Imperial Stout from Cory King (that’d be Abraxas or BA Abraxas). While I enjoyed my Danish pour, it was a little too strong for me and bit lacking on the fudge / dark chocolate that I enjoy in big Imperial Stouts.

Sample at the RateBeer Best of Festival 2015. Pours deep opaque black, very small brown head with a touch of lacing. Aroma is bourbon, molasses, coconut, chocolate. Rich and decadent. Flavor is light bitter, fully sweet, a bit of rye spiciness. Full body, creamy mouthfeel. Outstanding.
