The Black and roasted barley malts are fermented to dryness to provide perfectly balanced full malt flavours. Golding varieties of Kentish hops are used early and late in the boil to add a fresh clean bitterness.

(Cask, as DS Sussex Extra Stout, at Gallows Bird, Espoo, on 2008-10-23) Almost black. Medium sized lacy and white head. Coffee and roasted malts in nose. Medium bodied palate with little carbonation. Roasted malts, even burnt ones, bitterness and coffee in taste. Bitter and roasty aftertaste

Cask (@The Rake, Southwark): Literally black, firm, extremely persistent and lacy beige head; dry roast-malty nose with an almost smoked touch; light bodied, moderate bitter flavour; dry roast-malty finish with a light maltiness and fruitiness. Quite good, but a bit light bodied..........
