Many things can happen when collaborating breweries come together. Like with us and Jester King. We both share a deep affinity for sour and wild beers. But rather than rest on our laurels, we challenged ourselves to brew a beer reminiscent of a nearly forgotten, early 20th century cocktail, the Ramos gin fizz, employing our wildly traditional methods to do so. We began with some of the cocktail’s signature ingredients - lemon, lime, and orange zest, and gin botanicals- and then let our collaborative brewing process run wild. The result is laden with herbal and floral notes, bright lemon and lime zest, vanilla, warm oak and comforting spices. The Ramos gin fizz is a hard cocktail to find, and when you do, it takes 10 minutes to make. Our collaboration with Jester King will be similarly elusive; however, it took nearly a year in the making.

Bottle, 75cl. An unclear one, dark golden in color, and topped by a minimalistic white head. Lightly oxidized aroma with some maltyness in the back. Fruity, with grapes, dried fruit, raisin and prune mostly, with vanilla and a spiced, woody hint. It's full-bodied and tart, nicely carbonated and lightly warming, with mostly fruity flavors. Dark dried fruit, apple and some orange. Vanilla, hints of blueberry and a touch of lemon. Some vinegar showing up towards the very end. 241123

750ml bottle - Pours a hazy orange amber colour with a small loose off-white head. Aroma is lemony, vanilla, spice and funk. A vinous, fruity taste, both sweet and sour; orange, lemon, vanilla, light spicy flavours with a drying tart lemony finish. Very nice.

Bottle, 0.75l, shared with Jürgen. Aroma is vinous with cinnamon, vanilla and oak notes. Pours hazy brown orange color with thin soapy tan-like head and sparkling appearance. Taste starts tart vinous and ripe fruity, follows by barnyard, oak, spices and astringent mouthfeel with well hidden ABV. Full body, slick texture and lively carbonation in palate. Extremely tart one…

2015 bottle. Hazy golden-bronze color with a medium ivory white head that recedes steadily to an outer ring. Stringy lacing. Floral and fruity aroma with yeast and malt notes. Medium body with flavors of tart citrus, herbal yeast, spice and malt. The finish is botanical and citrusy gin. Good beer all around.

Bottle pour at Bruery Terreux, Anaheim. Second visit, and a much smoother visit this time (not brewery related) . Awesome beer, and didnt get robbed this time. Orange bright pour. Tons of gin aroma from quite a distance. Comes through in flavor too. Very much so. Smooth tart taste. Very nice.

Little cloudy orange beer, small creamy beige head, unstable, non adhesive. Aroma: pretty fruity, acidic impression, peaches, brett notes, bit dry, malty, dusty, some vanilla. MF: ok carbon, medium body. Taste: very sourish, bit fruity, lots of vanilla, very acidic. Aftertaste: bit malty, some alcohol, very acidic, more vanilla, dry finish.

Only good news here is it tastes better than it smells. Gin and lots of caramel, toffee. Pours dark oily brown without much head or lacing. Very sweet. Boozy. Tap at Churchkey.
