The Popol Vuh, the sacred book of the Maya, unfolds a complex web of mystery around a beverage known as xocoatl (ch-co-atle). At Southern Tier, we’re not surprised that hieroglyphs of the ancient Maya depict chocolate being poured for rulers and gods. Even through the many voyages of Columbus, the mystical bean remained nothing more than a strange currency of the native peoples. Moving through centuries, the circular journey of cacao has been realized in our brewing house, encompassing the complexity of the darkest, bitter-sweet candy together with the original frothy cold beverage of the ancient Maya to bring to you our Blackwater Series Choklat Stout. We have combined the finest ingredients to tempt your senses & renew the power & interrelation of history in every bottle.

Bottle - Dark chocolate, espresso and booze. Jet brown with a decent beige head. Lots of chocolate with some coffee in the finish. Light bitterness, but a little bland.

Poured from a bottle it is a dark brown with a slight head. The aroma is coffee and the taste is a coffee flavor with some chocolate and black licorice

From a 33 cl bottle shared at home. Pours black with a tan head. Aroma of cocoa and coffee. Flavors of dusty dark fruits, tobacco and a hint of licorice. Bitter roast finish.

Borefts VI. Keg.Almost opaque brown beer, small pate tan head. Palate is smooth and semi dry. Mild fine carbonation. Sweetish dark malts, mild dry dark malt cream. Big tangy coffee, fruity. Light dry finish. Big tangy coffee linger. Fine.

Bottle. Beermoth, Manchester. Just about black. Thin, dense, lasting light brown head. Dark roast coffee. Some grassy hop. A bit woody. Taste is milky sweet, with lots of an ashy dryness. Very dusty. Palate starts decently rich, but it doesn’t last, and gets a little watery. Finishes dusty dry. Not that impressed with this.

Bottled. A black beer with a dark brown head. The aroma has strong notes of coffee, combined with medium notes of roasted malt and alcohol. The flavor is sweet with strong notes of coffee, and medium notes of soy sauce, chocolate, roasted malt, and alcohol, leading to a dry roasted coffee finish.

On tap @ Borefts 2014. A really deep and dark brown one, almost Cola colored with a short lived but nice dark brown head. The nose has needles, coffee and a lovely darkness all the way. Some slightly dry cocoa also and lots of coffee! Freshly grounded. In the taste the cocoa is even more present. It feels thick oily in the mouth and its prickling soft on the carbonation. More needles in the taste. Don't know what they are doing here though.. Some macchiato-coffeeness with dry licorice. Quite a big, flavorful and successful one I'll say. 26.09.2014
