Spicy + Smoky + Honey + Ginger + Barrels

A beer inspired by a cocktail. Australian bartender Sam Ross created several enduring drink recipes whilst at Milk & Honey in New York, most famously the Penicillin Cocktail: a smoky, spicy mix of Scotch, honey and ginger and lemon. We have deconstructed these ingredients from the cocktail and put them all together to brew a beer we have been wanting to make for a very long time.

Dr Todd is our riff on the Penicillin cocktail. The end result is an Islay Whisky Barrel-aged, strong citrus sour. It’s been brewed with ginger, some lactose sugar and aged in barrels with British Black Bee honey and finished with more ginger and lemon zest. The Penicillin was inspired by the Hot Toddy, invented by the revered Dr Robert Bentley Todd.

Bottled@Littlepub, Vaasa (2019 vintage). Hazy yellow colour with a small white head. Aroma is smoked, yeasty, wooden, ginger and quite citrusy. Flavour is smoked, citrusy, peaty, some fishy elements and mild earthy notes.

330ml bottle - Pours a hazy orange amber colour with a small frothy white head. The aroma is spicy and smoky, ginger, honey and woody notes. A light sweet and tart sour taste, honey, ginger, whisky and woody flavours with a tart sour finish. Not for me.

330ml bottle from Wild Beer. Golden colour, thin white foam head and aroma of wood, phenolic, peaty, islay whisky barrel. Taste is sour, smoked meaty, peaty, metallic, iodine, with citric lemon rind, and salty notes. Slick mouthfeel, medium bodied, light carbonation, dry sour finish with lingering iodine notes. Quite drinkable.

Tap at Acido Acida 2021, in Ferrara, Italy. Pours intense blonde, with fine white foam. Aroma is slightly acetic, woody. Body and carbonation are average. Taste is fairly sour. Final is fairly long too.

Bottle. Lots of peat throughout, dominating the aroma. In taste it is joined by med-high sourness, relatively light ginger in the finish. Moderate leathery funk, light acetic acid. Overall intense, I expected a bit more richness, but nvm. Overall good but not great.

Bottle sample at a tasting at Yoav's place. Cloudy yellow. Strong spicy mustard/horseradish aroma, peat smokiness, some ginger, honey note, sourish-sweetish, lemon, wood. Interesting but all over the place.

Small white rim over hazy orange-golden beer. Punch-in-the-face smokey, phenolic², gingersoap, tarr. Sour, ginger, but thankfully less outspoken, lighter phenols, getting spicy in the finish. Alcohol extremely hidden. Still, oily, viscous. The nose is just too much. The rest is... actually quite good. Thanks to Stef!

On tap at BrewDog Norwich last beer of a 8 beer lunchtime. odd aroma. not sure about smoke. more like glue. eek. not sure what this is. sour glue wood. struggled with a third of a pint.
