Bottle in Winter Park with jcnielsen. Thanks Justin. Pours a hazy yellow appearance with a white head. Guava, pineapple, lemon fruit notes. Plenty of grass and herbs. Some tartness. Oak, white wine, and vanilla. Interesting but nothing too great.

Non Beer Trip Beer Trip Beer #2. Keg at the brewery. Clear pale golden, large creamy tan head, good retention. Aroma of brett, yeast, pale malt, spice, tannic wine, wood, earth. The taste is citrus, grape, wood, bready malt, yeast. Medium bodied, low carbonation.

Bottle. Pours a hazy yellow gold with large creamy white head leaving sticky lacing. The aroma is strong yeast, lemon zest, floral, citrus. Medium mouth, funky, yeast, lemon zest, citrus, crisp finish, very good.

Bottle shared during RBWG 2016 - cheers! Pours lightly hazy yellow-gold with a fluffy white head. Great aroma, some musty funk, old leather, barnyard hay, lemon rind. Light sweet flavor with slight lemony tang, mild wheat dough, hay, soft funk, grass. Light bodied with lively carbonation. Dry finish, nicely musty, just a bit if dry wheat sweetness, some bitter hay, grass. Really good stuff.

Bottle - Grassy and lemon funk. Clearish gold with a rich white head. Nice funky yeast and sweet grassy lemon. Very effervescent but nice.

Bottle shared at hotel lobby fart share @ RBWG 2016. Thanks peteycompletely! Light hazy hay yellow liquid with medium white head. Aroma of lemon peel, apple skin, light wood and grain. Taste is dry and light sour with notes of lemon peel, apples and light grain. Medium bodied with medium carbonation. Nice!

750 mL bottle, generous extra (one of MANY) from JStax, drunk 1/5/16.
Perfect appearance, with a massive white head that is very well-retained. Hazy body is a deep copper-gold with a huge amount of carbonation visible.
Light, floral brett notes are taken side-by-side with a peppery, lightly musty/cellar-like saison yeast character. These guys definitely have produced a real saison, not just the fake, vaguely Belgian crap most American brewers call saison. Gently fruity, with light cookies, biscuits and lemon notes on the finish. Barrel character is done well, with very little wine character and no heavy woodiness. No alcohol or flaws.
Lemon, sugar cookies, floral notes and light brett tartness are all enjoyable, but fairly quickly it’s obvious there are some body problems. Not that you want a saison thick and malty, but this is very watery and thin, with the heavy carbonation further pronouncing the lightness. Light nuttiness from the wood, some bare acidity and lots of spongey grain character on the end. That being said, the flavors are still very enjoyable, I think it just comes off a bit too undermalted and overattenuated. Very interested to try more from these guys.

Sample at the taproom. Pours a hazed yellow color with a medium white head that dissipates steadily to an outer ring. Short strings of lacing on the glass. Oaky, spicy, citrusy aroma. Medium body with flavors of funky yeast, vinous oak, citrus and malt. The finish is moderately funky with a citrus and yeast aftertaste. Above average overall.

Refrigerated 75 cl brown bottle poured into a glass. Hazy yellow with small white head. Aroma is funky yeast, medium/light body’s, medium carbonation, and little lacing. Taste funky, yeasty, and slightly dry finish.
