This beer was brewed for the Food Film Festival 2014 in Amsterdam. The theme of this years edition was fish, so we created a beer that would go well with fish. A saison spiced with dill and mustard seed, hopped with Nelson Sauvin hops.

Bottle at home. Aroma is floral, very herbal, mustard seed, dill, yeast, light malt, citrus, hint of grassy hops. Flavour is light sweet and moderate bitter. Body is medium. I have a general dislike of mustard, but I found this beer very drinkable. Interesting aroma, well made adventurous beer.

Bottle 0,33ltr: Hazy amber colored brew with an dry bitter taste and some herbal hints. Not an bad brew with fish seasoning.

Bottle. Herbal, spicy citric aroma. Tasty, has some odd flavors. Slightly alcoholic. Seaweed, mustard. Surprisingly good.

Fles 33cl thuis. Roggesmaak aanwezig, iets droog, licht zuur en wat wrang, bevat dille en mosterdzaad, fruitje. (4-2016).

Bottle at The Bottle Shop Margate. Hazy amber colour lasting ivory head. Some saison yeast aroma. Some sweetish malt in the mouth. Some hop and dryness on the finish. Saison dry malt biscuit and herb finish. Yes moderately funky. Sweetish malt. Light saison character. OK. .

Donkergeel bier met schuim. Smaak is bitter hoppig en kruidig met iets van kruidnagel en citrus. De dille en mosterd niet kunnen herkennen maar zal desondanks best smaken bij een vismaaltijd.

Bottle at Oedipus Taproom in Amsterdam. Tightly lacing, pale greyish white, irregular, moussy head, cloudy orange blonde robe bordering on amber with visible strings of fizz on the sides. Aroma of dried dill and mustard seed powder indeed, next to orange peel, jute, dust, hay, red apple, minerals, dry bitter herbs, ripe apricots, almond (or even very light marzipan). Very spritzy onset, strong and numbing carbonation (overcarbonated even for this style), dry peach, apple peel and red berry impressions establishing a restrained ’dry’ fruitiness, minerally side notes, smooth cereally and slightly caramelly malt backbone, rounded but coarsened by the sharp carbonation, drying spicy finish with retronasal mustard seed (almost ’old’ and dusty) but far less dill, peppery and hayish hop bitterness, bit resinous and sufficiently drying. Both spices have been applied both cleverly and generously, working well to accentuate the hop bitterness and rural, ’dry herbal’ character one tends to expect from saison, overcarbonated for sure but refreshing and accomplished enough.

33cl bottle from a trade with Douberd, thanks! Pours slightly hazy huge and big off-white foam. Aroma of wood, oak, spices and yeast. Taste of sweet malt, oak, spices, high carbonation.

hazy amber colour, large, dense off-white head; aroma of dill, mustard, earthy, barnyard, as well as citric acid notes; taste is fully dominated by dill and mustard with earthy and citric notes, maybe some vanilla, too; one of the strangest beers of my life...well, it is a bit too much for me...
