This beer was brewed for the Food Film Festival 2014 in Amsterdam. The theme of this years edition was fish, so we created a beer that would go well with fish. A saison spiced with dill and mustard seed, hopped with Nelson Sauvin hops.

Fles 33cl thuis. Roggesmaak aanwezig, iets droog, licht zuur en wat wrang, bevat dille en mosterdzaad, fruitje. (4-2016).

0.15 l on tap at ’Craft & Draft’. Clear, amber with a white head. Sweetish, spicy aroma of caramel, juniper and ginger. Sweetish-malty, slightly spicy taste of caramel, juniper and some ginger, followed by a short, slightly bitter, spicy finish. Medium body, slightly oily mouthfeel, flat. Okay.

Bottle courtesy of Douberd, many thanks! Orange color with creamy white head. Aroma is yeasty, spicy, dill and mustard seed indeed, fruity with bitter orange as well. Taste is spicy, dill, mustard, dough, tangy. Earthy-herbal finish. High foamy carbonation. Nice.

Bottle at home. Pours hazy copper with an orange hue. White head. Lot of spices and yeast up front, followed by oranges and lemon and dille. Bittersweet with a light lactic acidic bend. Sourdough element from the yeast I think. Medium bodied, with prickly carbonation. Because of the dille in the aroma this beer combines really well with my smoked salmon dish, which is pretty awesome! Beer and fish usually don’t match this well.

33cl bottle. Bottled on 03/2015. The beer looks amber in color with a thin white head. Aroma has dill, apricots, citrusy notes. Hint of barnyard as well that transfers to the flavor. Apricots, dill and citrus. Very dry finish. Awesome drinkability.

Bottle at home in London - picked up at Kris Wines. Pours clear yellow-gold with a large, strong frothy head. The nose has lots of dried hay, wheat flakes, lemon rind. Light sweet flavor with firm grassy bitterness, pithy grapefruit, grain husk, straw, faint saison yeast. Light bodied with lovely, mouth-filling carbonation. Lightly sweet on the finish with more grassy bitterness, grains, wheat, rindy citrus. Pretty basic, but fine.

330ml bottle at home. Pours hazy golden orange with a thick white head. High carbonation. Dill is coming through on the aroma, plus some hops. Taste is light sweet, faintly herbal, a building mustardy note that isn’t hot though. Slightly thin on the finish. Interesting.

33 cl bottle. Pours clear and golden orange with a huge white head. Aroma is peachy and grapefruity. Bitter, crisp hoppy. Smooth fruity and crisp hoppy into the finish.

Bottle sample at a tasting at Max’s place. Thanks troubles. Hazy golden with a white head. Aroma of citric hops, funk, some spiciness, slightly soapy, and herbal notes. Flavor is quite dry, funky, with some earth, spiciness (a bit of dill), and a bitter finish, citric and herbal. Medium-bodied. Quite decent.

330 ml. bottle purchased @ De Bierkoning. At home. Bottled on 10/03/2015. Hazy orange, med tad off-white head. Nose is big fruity, sweetish peach, some blue cheese, creamy apricot, cake, candy sugar, delicious cake & blue cheese, great hops,… Quite awesome. Taste is creamy cake, candy, sweet bread yeast, some sugar leading into blue cheese, quite hoppy, bitterness, creamy yeast in a good way, caramelized apple, sugar, spice bitterness, some mustard I suppose,… I love blue cheese tasting beers, wonderful beer, very creamy,… Awesome.
