This beer was brewed for the Food Film Festival 2014 in Amsterdam. The theme of this years edition was fish, so we created a beer that would go well with fish. A saison spiced with dill and mustard seed, hopped with Nelson Sauvin hops.

Bottle at home. Clear dark gold with short lastig fizzy white head. Oh yeah I really get the dill here, some nettles, tart citrus peel, lime, endive, light toast. Light sweet with light tartness and medium bitter finish. Crisp feel. Quite herbal beer but it works well here, I’m pleasantly surprised.

On tap at APEX. Pours a cloudy amber color with a medium white head. A big spicy nose, herbal. The flavor certainly showcases dill, rich herbal notes, light toffee. Fresh. Works well.

Borefts VI. Day 2. ’Craig has blue nipples’ post fest tasting in his room. Lightly hazy amber beer, big fluffy pale cream colour head. Airy palate. Light malts, little sweet and with a touch of dry cream. Touch of hops, little orange snd lemon cream, somewhat Sorachi like. Airy finish. Not bad.

Bottle split in Craigs room, Borefts Day 2 after party tasting, 27/09/14 I think Kenny and I supplied this one? Hazed orange amber with a decent off white covering. Nose is floral, herbal notes, bitter orange, light tropical fruits. Taste comprises pineapple, tangerine, mandarin. Medium bodied, spritzy carbonation, grassy licks in the close. Over carbed which lets this one down a bit.

33 cl bottle @ home. Amber color, slightly hazy. Huge off white head that keeps growing. Good lacing. Smells a bit dusty, herbal, fruity. Retronasal it’s herbs/spices, fruit, light caramel malts, light bitterness. Flavor is moderate bitter, herbs/spices, light sweetness. Light bodied. Quite high carbonation (at first). Finish is herbal/spicy, light bitter. Not entirely balanced and convincing, but decent enough.
