ケトルサワーリングという手法を使い、酵母で発酵させる前の麦汁を乳酸発酵させ酸味を持った味わいを作り出しています。さらにたっぷりのアメリカンホップを使用し、アメリカンIPAとサワーエールの融合をみました。
酸っぱくて苦いというテイストは万人受けするものではありませんが、そんなビールを作れるのも小規模ならではの面白みです。

Shared by Lefty at Bungalow. Sui mo nigaimo Sou IPA 5% Cloudy gold with a foamey white head. Light bodied with a watermelon clove tangy acreitic sour flavor and a touch of an odd toothpaste like flavor in the finish. The malts give a soda cracker like taste. As it warmed up the sourness became a bit baby sick like... 3.3—> 3.1

Tap at Bungalow. Hazy bright gold with a thick head. Kind of minty, lemony nose. flavor os tea, mint, cabbage, kind of like tooth paste. WTF? Seemed slightly infected bit according to the brewer it was just a weird batch of Apollo hops! Wow, these hops suck. Looking forward to trying a different batch, as the rest was decent.
