今回のリリースでは典型的な現代のアメリカンペールエールから着想を得ていますが、より複雑さを生むために2つのアレンジを加えました。1つ目は麦芽総量の15%にライ麦麦芽を使用したことです。これにより、スパイシーな味わいと香りがやさしく添えられ、よりしっかりとした深みのある口当たりを生みました。もう1つは私たちのハウス酵母であるベルジャン酵母を使用したことであり、ライ麦麦芽のスパイシーさを引き立てるとともに味わいにフルーティーさをもたらしました。この2つをしっかり結び付けるために、典型的なアメリカンホップであるカスケードとセンテニアルを使用し、それらがもつシトラス系の味わいが酵母の特徴とうまく混ざり合っています。これにより、ユニークで深みのある味わいを持ち合わせた爽快かつ飲み易いペールエールに仕上がりました。みなさんがもつ典型的なペールエールのイメージとは一味違うものになったのではないでしょうか。
名前の由来:レシピの点からみると今回のビールは私たちがこれまでつくってきたビールの中で最もユニークなものの一つに挙げられるのではないでしょうか。典型的なアメリカンペールエールをベースとしながらも伝統的な原料ではないライ麦やアメリカンホップ、ベルジャン酵母を組み合わせています。1つのビールの中で種々の要素が混ざり合っている、ゆえに、”るつぼ”と名付けられました。

Name: Rutsubo
The 32nd beer release in our "Limited Edition" series (our 213th batch): There is something about the classic Pale Ale that combines everyone’s favourite things about beer into one product balanced package. The malt character is firm but not overpowering, leaving just enough flavour and nuance behind to support a refreshing hop flavour and aroma, and the balance of the two means that there is always room for one more sip. It is the perfect go to beer for any occasion, and one that certainly had a profound impact on the development of the craft beer movement around the world.
With this release we looked to the standard-bearers of the modern American Pale Ale for inspiration but decided to add two unique twists for additional complexity. The first was an addition of about 15% malted rye, which lends a slightly spicy flavor and aroma and creates a mouthfeel with a bit more depth and fullness. Added to this was the use of our house Belgian yeast strait, which both picks up on the spicy character of the rye malt and adds another layer of fruit character to the flavour profile. To tie these together, we looked to the classic American hop varieties Cascade and Centennial, whose citrus forward flavour and aroma blend well with the yeast character. The result is a pale ale that is both refreshing and drinkable, but with a unique and deep flavour. We hope you agree that this isn’t your typical Pale Ale!
Naming: This beer is one of the most unique we have brewed from a recipe standpoint, combining non-traditional grains (rye), American hops, and Belgian yeast, all while paying homage to one of the classic American-style Pale Ales. It is a bit of a melting pot, hence “Rutsubo.”

Tap at KBC back in March. Kyoto Brewing Maru de Rutsubo Belgian Rye Pale Ale 6% A spicy aroma, it almost gives hints of cloves. This amber beer has a chewy medium body with peppery clove spice notes and delicate floral/hop character. A bit of green hoppiness in the somewhat dry finish. Crisp and drinkable, a good beer for the transition from cold to warm weather. ---Rated via Beer Buddy for iPhone

Tap several times and several places. Spicy rye nose, Belgian yeast, nice malt. Delicate and spice, very nice use of the rye, easy drinking and satisfying.
