その結果、アルコール度数8%の強烈なインパクトを与えるダブルウィートIPAが生まれました!小麦麦芽が豊かで滑らかな口当たりをビールにもたらし、1リットル当たり10gという大量に使用したホップの味わいをしっかりと支えています。アメリカ産のガツンと特徴的なトロピカル系ホップ(Zythos、ColumbusやHBC344)の味わいが高いアルコール度数が感じさせる甘みによってしっかりと引き出され、一方でオーストラリア産品種のEnigmaとVic Secretがビールにしっかりとした香りを与えております。遂にリリースの時を迎えたトロピカル系ホップ爆弾ともいえる今回のビール、京都醸造IPA新年初リリースとなるその幕開けを飾るにふさわしい仕上がりと皆さまに感じていただけると幸いです!
名前の由来:今年初めて作ったこのIPAに曙という名前をつけた。 その心はまさに「始まり」であり「力強さ」の意味合いの強い仕上がりだからだ。小麦麦芽とホップをふんだんに使用し、強い飲みごたえがとても印象的だ。
初春の朝の凍てつく空気の中、東の山の端から太陽が今まさに昇らんとする時、曙の空はうっすらと白み始め、紫色の霞がかかる。 赤い太陽が稜線からゆっくりと力強く立ち上がる瞬間を仰げば、体中に力がみなぎってくる。 さぁ始まった、始めよう!
太陽のように情熱的で、横綱のように力強く、日の出のように人々を元気づけるようなビールを作りたい。そんな志と共に、今年は曙と共に始まった。

Name: Akebono
The 30th beer release in our "Limited Edition" series (our 205th batch): After a long string of dark beers, Ambers, and Saisons, we are happy to announce our first IPA release of 2018! While we make hoppy beers in the American style and hybrid versions with Belgian yeast, the majority of them tend to be on the more balanced side with hop flavour and aroma given more preference than bitterness or maltiness. Since this is the first IPA release of the year, however, we wanted it to be one with a lot of impact and something a little different than anything we had brewed before. To achieve this we looked to a huge amount of malted wheat (40% of the total grain recipe), an amalgamation of some of our favourite dankly tropical hops, and no bittering hop addition.
The result is a 8.0% ABV Double Wheat IPA that certainly packs a wallop! The wheat malt leaves a deeply rich and silky mouthfeel and creates a perfect backdrop for more than 10g/L (2 lbs/bbl) of hops. The high ABV leaves a feeling of sweetness that brings out the dank tropical flavour of hops from the US (Zythos, Columbus, and HBC 344) while the aroma is dominated by the Australian varieties Enigma and Vic Secret. This is certainly a tropical hop bomb that we are looking forward to sharing with you, so we hope you agree that this beer starts the year off right for Kyoto Brewing Co. IPAs!
Naming: Non-Japanese speakers familiar with “Akebono” will probably think of the famous sumo wrestler, who was a dominant yokozuna in the 1990s. What people may be less familiar with is the origin of the name. Akebono means “dawn” or “daybreak”, which seemed somewhat of a fitting name for our first IPA of the year and, since this was to be our first IPA of the year, we decided to go all out and make it as hard-hitting as possible.
We used a large volume of hops and plenty of wheat for a full mouthfeel, not to mention an ABV of 8.0% as well. While starting the day with this beer is not advised, we think this should make for an impactful first IPA of the year, with the weight of a yokozuna and an appropriately strong punch!

Lots of lemon. Can’t feel the strength. Bit underwhelming but nice at the same time.

Tap at Bungalow and Bud. Clooudy golden color. Great nose, pineapple, tropical fruit, grapefruit, wheaty, miscuity malt. Got the NE thing going. Flavor is sweet at first, very fruity, not completely juicy, but nice hops. Somewhat astringent in the finish, which is confusing because it lists no bittering hops. Body is full and smooth. Nice bit a bit too bitter.

With the KBC taproom closed until March I’ve gotta work harder to try their new releases. I finally found their new double IPA on tap, yay!
Akebono Double IPA 8%
590¥ glass at Kyoto Sando, opaque gold with a thin eggshell white head that lingers. It has a great fresh citrus aroma, is medium bodied and like many KBC beers bone dry in the finish.
The taste features pithy juicy citrus (grapefruit and prickly pear) with some earthy tropical undertones. Good stuff.
