With their latest brew, Pilot used ingredients including jaggery sugar and fenugreek, putting the India back into IPA and making an educated nod to the history of this style.
The aroma is warm spice and tropical fruit, and these carry through to the taste, which is surprisingly sweet, delicate and welcoming, with washes of passion fruit, liquorice and toffee, before suddenly moving to a medium dry bitterness that lasts and lasts.

Bottle thanks to Niall / Leighton. It pours cloudy orange with a decent white head. The nose sticky, orange, marmalade, lemon poppy seed muffin, sherbet, juicy, apricot jam and peach. The taste is bitter-sweet, juicy, earth, peach, apricot, jammy, wood, booze, muffin, pine, resin and straw with a dry, warming finish. Medium+ body and fine, prickly carbonation. Punchy stuff. Hefty, but nice.

Bottle from Cornelius. Hazy orange body with a medium white head that holds well. Steady carbonation. Great lacing. Aroma of mango, honey, orange and earth. Flavour of creamy malt, boozy apricot and a light peppery finish. Good bitterness. Medium body with an oily mouthfeel. Soft fizz. A lovely beer - not as hop dominated as other DIPAs, but it’s well rounded and very drinkable for the strength.
