Together with chefs Onno Kokmeijer and Arjan Speelman of the Michelin-starred restaurant Ciel Bleu we created this highly tasty I.P.A. The dry-hop with Waimea and Citra hops gives the beer a floral, bitter character and the addition of kaffir lime provides a tropical touch. Completed by a deep golden color, the Ciel Bleu I.P.A. is an irresistable beer. Ciel Bleu I.P.A. is on the menu of restaurant Ciel Bleu and is limited available in our pub.

Bottle sample at a tasting at Tom L’s place. Thanks avrashi. Clear golden. Aroma of grains, wort, stale hops. Sweetish flavor, grainy, with a bit of honey, and bitter stale hops. Medium-bodied.

Bottle at home. Clear amber with small bubbly off white head. Spruce, grapefruit, beeswax, resin, lemon, marmalade, quite some caramel and even a hint of fudge. Underneath it all is a light spicy yeast. Medium sweet with long lasting medium bitterness. Medium bodied with oily feel. Very oily and almost waxy beer but nicely balanced by the grapefruit notes and sweetness.

Bottle. Golden pour, white head. Aroma is very bitter and grassy, with yeast and pine. Taste of bitter herbs, lime, sharp grass and hops in the finish. First beer with waimea that’s not nasty. Not very interesting though.

Citrus nose. Clear medium amber colour, large frothy white to off-white head, good retention and lacing. Aroma grapefruit, lemon, grass, floral notes. Smooth taste, medium bitter and light sweet, lime. Medium body, oily texture, soft carbonation, round dry aftertaste, full of fruity bitterness and light sweet notes, also herbal notes, a well-balanced IPA, very good.
