Mikkeller and To Øl present to you - our effort to make the lightest beer in the world. What is the lightest beer in the world???

What we mean, is that Walk On Water is the beer with the lowest density. It simply weighs the least.
Brewers and beergeeks alike tend to describe beer by its density (or gravity). The specific density of a liquid is determined by its amount of dissolved matter. Normally proteins, carbohydrates, lipids and ashes are the four factors governing the density of a liquid. But for a beer it is more appropriate to describe its density by two factors; carbohydrates(sugar) and alcohol. Alcohol is much lighter than water, while carbohydrates (or sugars) in solution will raise the density of water.
When we brewed this beer the challenge was to ferment as much of the sugars from the malts as possible, without leaving any residual sugars. This is fairly easy for low ABV beer types, but is much more challenging for a 14% ABV beer - you could say the higher alcohol percentage the lighter, but then again high alcohol would lead to high amount of rest sugar and therefore the beer would be heavier.

After working on the breakdown of residual sweetness (dextrines etc.) and optimising our fermentation, we ended up with this beast of a boozy beer!
14% alcohol and no residual sugar making it a 100% attenuation fermented beer makes this the dryest and lightest beer in the world.

On tap at Bangers & Lace. Pours a clear gold with a white head that dissipates to the edges. Aroma is boozy with a bread and hay backing. Flavor has a combination of syrupy grass, booze and sweet grains.

On tap @ Patricks. Unclear orange body with a small, lacing off-white head. Aroma has ripe fruit, caramel, honey and alcohol. Flavor is intense sweet, sticky caramel, dry fruit, bitter and alcoholic. Full body and long aftertaste. Too sweet, to sticky and too boozy for me, out of balance.

Botella de 33 cl. 14 vol. En casa 27-11-13. Color ambar-miel de espuma blanca que desaparece casi por completo de medio vaso para abajo. Olor muy afrutado (fruta tropical, piña, naranja, mango) con gran carga a malta. Sabor también muy afrutado al principio (piña mango papaya naranja amarga) algo dulce, pastoso y oleoso, con final seco poco resinoso predominando el alcohol. Cuerpo medio - fuerte sobre todo a medida que calienta combinandose perfectamente la malta y los sabores afrutados con el fuerte, fuerte fuerte y seco volumen alcohólico. Final amargo poco acentuado. Alucinante cerveza Alucinante. Imprescindible repetir. Para tomar poco a poco ya que un pequeño sorbo basta para inundar la boca de sabor que permanece durante un buen rato. Con poco amargor y tan afrutada es fácil de beber, pero sus maravillosos 14 vol te harán soñar.

Bottle @ Greg’s dump. Last rotbox offering of the night thankfully. Pours a touch hazy yellow appearance with a white head. Sweet goopy candy, somewhat boozy, herbal honey aroma. Slight rubbing alcohol, boozy, goopy mess. No.

Bottled 330ml@VWPBF Hazy yellow color, small white head. Citrus and peach in the nose. Medium-bodied. Fruity flavor, citrus, burning alcohol dominates everything. Interesting but not very good.

Konsentrert fruktig sødmerik lukt med preg av lys malt, humle, tørka frukt, kvae, aprikos, karamell, barnåler, sukker, høy, lauv. Fyldig konsentrert fruktig og sødmerik smak med preg av lys malt, humle, tørka frukt, gras, karamell, alkohol, barnåler, høy, våte blad. God bitterhet som set godt, litt beisk. Grei.

33cl bottle pours with a hazy deep gold body that supports a weak white head. The aroma offers up thick syrupy sweet apple and pear notes mixing with hard candy lime and some chemical booze. The taste is similar with big booze nuanced apple, pear and fig notes that slide into a champagne slightly white wine like sensation to midway. Once the finish rears its ugly head the boozy chemical booze note comes forward and it allows for a semi dry semi harsh finish. Neat sipper though.

Leicht alkoholischer Antrunk, der durch süßliche Malznoten erstaunlicherweise ausgeglichen wird. Die Süße bleibt, die Alkoholnote verstärkt sich. Zitrusnoten, für den Alkoholgehalt wirklich erstaunlich süffig. Zum Ende wenig aromatisch, deutlich hellmalzig, fast brotig. 8/9/9/9/7/9

On tap at Beer Temple. Clear golden colour, white head. Aroma of grains, alcohol, quite sweet, light fruity. Flavour is light sweet, fruity, mostly sweet and warming/hot alcohol, dry and bitter finish. Hard to describe, but I liked this a lot. Medium-bodied at best.

On tap @ Beer Temple, with joes, caesar, borrestein, TheJvd etc. Clear golden color. Sticky white head, good lacing. Aroma’s: malty, sweet, candy sugar. Also alcoholic and somewhat medicinal retronasal. Flavor is moderately sweet, fruity. Strong alcohol feel. Medium bodied. Finishes dry and rather bitter. Interesting.
