Mikkeller and To Øl present to you - our effort to make the lightest beer in the world. What is the lightest beer in the world???

What we mean, is that Walk On Water is the beer with the lowest density. It simply weighs the least.
Brewers and beergeeks alike tend to describe beer by its density (or gravity). The specific density of a liquid is determined by its amount of dissolved matter. Normally proteins, carbohydrates, lipids and ashes are the four factors governing the density of a liquid. But for a beer it is more appropriate to describe its density by two factors; carbohydrates(sugar) and alcohol. Alcohol is much lighter than water, while carbohydrates (or sugars) in solution will raise the density of water.
When we brewed this beer the challenge was to ferment as much of the sugars from the malts as possible, without leaving any residual sugars. This is fairly easy for low ABV beer types, but is much more challenging for a 14% ABV beer - you could say the higher alcohol percentage the lighter, but then again high alcohol would lead to high amount of rest sugar and therefore the beer would be heavier.

After working on the breakdown of residual sweetness (dextrines etc.) and optimising our fermentation, we ended up with this beast of a boozy beer!
14% alcohol and no residual sugar making it a 100% attenuation fermented beer makes this the dryest and lightest beer in the world.

Tap @ Beer Temple. Clear golden to amber color, short head. Aroma of some grainy malt, bit straw. Not much aroma actually for such a strong beer. Soft malty taste, slight bitter. It actually drinks like an easy drinking strong amber beer or something, didn’t notice the 14% actually. However, it lacks complexity to make it a world class beer.

Bottle shared at CBC Clerkenwell during Paul’s Birthday Celebration - this one I got in a trade with THE fonefan. Pours clearish gold with a frothy white head. Nose is all booze-soaked tangerine. Big sweet flavor, plenty of alcohol, more tangerine, pale wood. Full bodied with fine to average carbonation. Warming to hot finish, more boozy citrus fruits, light hay. Heavy stuff, some interesting aspects. Decent.

Bottle at Craft Clerkenwell. It pours hazy golden with a small white head. The nose is earth, mustiness, sticky orange, tangerine, booze, potpourri and parma violets. The taste is tangerine, orange, tinned fruit, booze, earth, bitter pine and light toast with a dry, warming finish. Medium body and fine carbonation. A bit hot. Ok at best.

Draft sampled in mikkeller and friends. Pours hazy orange with a small off white head. Aroma of citrus, orange, yeast, cereal, alcohol, malt, wort. Flavour is moderate sweet and light moderate bitter. Medium bodied with soft carbonation.

Tap at Mikkeller and Friends. Poured a hazy light amber with a frothy white head. The aroma is clean, yeasty and packed with citrus fruit. The flavour is alcoholic bitter, orange fruit, yeasty, some acidity and lots of orange peel on the palate. The ABV is high, but it really does not destroy the beer as often happens. It’s smooth, rich and somewhat like a liqueur. A really excellent beer.

On tap at Mikkeller and friends. Thick creamy white head. Hazy golden blond pour. Very refreshing fir the alcohol. Nicely done.

Bottled@vPBFII. Hazy golde colour with asmall white head. Aroma is fruity, mild gluelike sweetness, toffee and some yeast. Flavour is caramel, alcohol, some mild syrup and resiny notes along with citrus.

Aroma is sweet with honey, grain, cereal and some American hops. Flavour has booze, some sweet malts, honey and distant herbal notes. Too much booze here.

330mL bottle, pours an opaque cloudy golden with a small white head. Aroma of cardboard, apple cider vinegar, dry crackery malts, and something reminiscent of oxidized notes. Flavour is slightly more pleasing but basically follows suit - it's extremely dry, with dry cardboard, apple cider vinegar, loads of rubbing alcohol, a bit of citrus hops fighting their through, and a bit of lightly tart stone fruit. Really bizarre flavour profile - the 14% makes this exceedingly difficult to drink, as it's not hidden at all, nor does it suit the flavour components or the body. Not sure what the hell these Danes were doing here, but it's a failed experiment. Couldn't drink more than a few ounces of this. Becomes gross very quickly.

Beautiful fluffy white head with instant lace; veiled orange beer. Citrus, peach, fruity esters; alcohol definitely traceable in the nose, apricotbrandy. Sweet, alcoholic, if mainly fruity. Again definitely apricot(brandy) and/or peach. faint touch of (apricot/peach)yoghurt. Feels quite carbonated, spritzy, bit fiery feel; light to medium apparent body; alcoholheat. Impressive beer, truly. For sweet- and alcoholfans - but also for inquisitive people.
