Mikkeller and To Øl present to you - our effort to make the lightest beer in the world. What is the lightest beer in the world???
What we mean, is that Walk On Water is the beer with the lowest density. It simply weighs the least.
Brewers and beergeeks alike tend to describe beer by its density (or gravity). The specific density of a liquid is determined by its amount of dissolved matter. Normally proteins, carbohydrates, lipids and ashes are the four factors governing the density of a liquid. But for a beer it is more appropriate to describe its density by two factors; carbohydrates(sugar) and alcohol. Alcohol is much lighter than water, while carbohydrates (or sugars) in solution will raise the density of water.
When we brewed this beer the challenge was to ferment as much of the sugars from the malts as possible, without leaving any residual sugars. This is fairly easy for low ABV beer types, but is much more challenging for a 14% ABV beer - you could say the higher alcohol percentage the lighter, but then again high alcohol would lead to high amount of rest sugar and therefore the beer would be heavier.
After working on the breakdown of residual sweetness (dextrines etc.) and optimising our fermentation, we ended up with this beast of a boozy beer!
14% alcohol and no residual sugar making it a 100% attenuation fermented beer makes this the dryest and lightest beer in the world.

330ml bottle. Cloudy golden colour with average, frothy, fairly lasting, minimally lacing, white head. Yeasty, hoppy and fruity aroma has a citrus note, some tangerine, grapefruit and the like. Taste is initially dry and fruity, citrusy, some grapefruit, later with a bitter medicinal touch; biting hop and biting alcohol. Phew!

(Bottle, MacKinlay’s, Stockholm) Hazy golden colour with frothy, white head. Fruity, malty nose with peaches, citrus, alcohol and a slight acidity. Fruity, malty taste with notes of citrus, peaches, Seville orange, honey and a slightly sourish finish with a spicy bitterness and a fair amount of alcohol. Full body, quite chewy, fairly sweet. A bit weird, but quite decent.

Flaske på Cafe Viking: højt, hvidt skum! Og med en aroma av bitterappelsiner, Zalo (!), kiwi og sødme, som alle gjenfinnes i smaken er dette til forveksling lik en belgisk tripel. Fin karbonering og deilig munnfylde. At denne er på hle 14 vitaminenheter merkes ikke før jeg skal reise meg for å betale.

Bottle. Golden colour with an off-white head. Aroma is sweet, caramel, peaches, syrup, fruit. flavour is sweet, caramel, peaches, syrup, hop, alcohol, fruit. Full body. Nice beer.

Pours amber with a small head.Very malty aroma but also a fair bit of piny and grapefruit-like hops.Sweet flavours at first, lots of clean malt. Then pine and grapefruit roll through followed by a aggressive bitterness and lots of overt booze.Too much carbonation.Booze dominates this one.

Bottle thanks to Craig. This beer helped put me over the edge before we all got MC’d. Pours a clear yellow/golden hue with a small white head. A sweet fruity citrus nose. The flavor is heat, fizzy, banana, apricot, like a big BSA. Good.

33 cl. bottle sampled @ Delirium Hoppy Loft. Apparently this is supposed to be the lightest beer in the world by gravity (the RB description features a great explanation of what this precisely means). Overall an interesting concept / not a big fan of the label but overall this is the case with many Mikkeller beers. Brewed by De Proef as usual. Pours a clear orange with a small white head. Smell is quite strongly hoppy, oranges & flowers hops as well as fruity with peaches and even though I know that there is no residual sugar etc., I am getting sugary sweetness here. Taste is caramel, peaches, syrup, canned peaches juice, bitter & floral bitter hops, quite strongly, hoppy, quite dry with strong yeast, this carries quite a lot of booze in the flavour esp. in the back & clearly noticeable and a strong characteristic. Quite light indeed. A curious one, not entirely awesome but certainly interesting, that is for sure. Reasonably apply rated on here I would say.

Bottle from Monument in Concord, CA. Pours hazy orange/gold with a creamy white head. Aroma is citrus with hints of fusil oils. Med minus body. Flavor is citrus, malt - but it comes together like a 24 oz nasty can. Well, is a bit better than that, but ... It really does make one think of varnish remover. Well, a bit better than that. Still....Give it this: the heat isn’t really a problem. :)
