La Bonté is open fermented with our house Brettanomyces culture. This beer is then blended with a portion of Golden Sour and onto a half pound per gallon of Italian Plums. La Bonté is then aged in our foeder until it reaches perfection.

8-3-7-4-15 Bottle, vintage 2015. Shared with Inbreak and friends. Pours yellow with sediments, with a creamy head. Aroma is tart fruity notes of grapes, plums, musty fruit peel and bretty notes with floral notes, as well as sour candy, wooden notes and minerals. Medium body, with average carbonation. Flavour is tart notes of hay and fruit peel, as well as grapes, plums, apples and floral bretty notes.

Aroma is tart fruity notes of grapes, plums, musty fruit peel and bretty notes with floral notes, as well as sour candy, wooden notes and minerals. Medium body, with average carbonation. Flavour is tart notes of hay and fruit peel, as well as grapes, plums, apples and floral bretty notes.

Tap. Pours clear golden with a small white head. Aromas of citrus, plum, lactic, light vinegar, floral. Taste is bretty, estery, peachy, plum, lactic.

Bottle. Golden color, hazy. Pear, peach and brett in the aroma and flavor. A modest sourness. Tropical fruit flavor. Very fruity. Great.

500 ml bottle into tulip glass, bottled on 8/5/2016. Pours slightly hazy/cloudy deep golden amber color with a 2 finger fairly dense and rocky off white head with fantastic retention, that reduces to a nice cap that lingers. Thick soapy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big juicy, lightly tart/tangy plums, fruit skin/pits, peach, pear, apricot, lemon, lime, orange, pineapple, mango, melon, red/green apple, white grape/wine, peppercorn, oak, hay, straw, grass, wheat, cracker, and white bread dough; with lighter notes of leathery/musty/lacto funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of plums, fruity/funky/acidic/spicy yeast, oak, and pale/wheat malt notes; with great strength. Taste of big juicy, lightly tart/tangy plums, fruit skin/pits, peach, pear, apricot, lemon, lime, orange, pineapple, mango, melon, red/green apple, white grape/wine, peppercorn, oak, hay, straw, grass, wheat, cracker, and white bread dough; with lighter notes of leathery/musty/lacto funk, and yeast/oak earthiness. Light-moderate peppery Brett/oak tannin spiciness, fruity/lactic tartness, and fruit tang on the finish. Lingering notes of tart/tangy plums, fruit skin/pits, peach, pear, apricot, lemon, lime, orange, pineapple, mango, melon, red/green apple, white grape/wine, peppercorn, oak, hay, straw, grass, wheat, cracker, white bread dough, light leathery/musty/lacto funk, and yeast/oak earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of plums, fruity/funky/acidic/spicy yeast, oak, and pale/wheat malt flavors; with an awesome malt/spicy/tartness, and tangy fruit balance; with zero puckering/astringent flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering tart/spiciness, tangy fruit, and carbonation. Medium-plus carbonation and medium body; with a very smooth, moderately creamy/grainy, acidic/tangy, and fairly tannic balanced mouthfeel that is great. Minimal warming alcohol for 6.5%. Overall this is a fantastic fruited sour/wild saison. All around fantastic complexity, robustness, and balance of plums, fruity/funky/acidic/spicy yeast, oak, and pale/wheat malt flavors; very smooth, refreshing, and fairly crisp to drink with the mellowly acidic/tangy/spicy/drying finish; not overly lactic. Fantastic balance between juicy plums and Brett/Bacteria complexity; with great oak foeder presence, and pale/wheat malts against acidity. Minimal residual sweetness with crisp dryness. A highly enjoyable offering, and outstandingly spot on style example.
