INSPIRATION: Inspired by so many things it's hard to believe. While tasting the colab that Brasserie Thiriez and Saint Somewhere brewed & listening to the song "Stars" by Hum on repeat, the idea of Train to Mars finally transpired. A modern, hoppy version of a "Biere de Mars" to be brewed in January and released in Mars (March). CONCEPT: While at Chez Thiriez, we scoped out his hop selection and realized we could actually brew with both American & French hops and have the names spell out MARS; Mosaic, ARamis, and Simcoe. Well, they ended up being a perfect blend that provide the delicate yet exotic aromatic quality of Train to Mars, but used with enough restraint to accompany the Thiriez house yeast strain. Train to Mars isn't exactly "Radical" but it is our favorite brew so far and interestingly enough a third of the batch is aging in Cote du Rhone barrels accompanied by locally sourced honey and Brettanomyces; sounds a bit more like Get Radical, doesn't it? REALIZATION: By far our most collaborative effort yet. Proudly brewed (annually) with our friends at Brasserie Thiriez in Esquelbecq, France in January .

Bottle at home, acquired at La Cave à Bulles, Paris. Aroma is peppery yeast, bit spicy, grainy malt, hay, grassy hops, fruity notes, bit bready. Flavour is light sweet and above moderate bitter. Body is medium. A very fine peppery grainy and grassy Saison.

750ml capped bottle, no dating. Bought at Liquor Shed.

It pours a hazy yellow, dark yellow, great head of foam and lacing.

Smells like a Saison that happens to have significant hop aromas. Think the dry hopped Saison Dupont. Cloves, coriander, yeast, with grassy kinda fruity hop bitterness going on.

Saison qualities intact, tropical fruit hoppiness more than bitterness. The 5% abv makes it supremely drinkable, the dryness makes you yearn for more.

Barely medium bodied with lively but not over the top carbonation.

Such a great beer!

Bottle from Toby. Hazy yellow orange color with a small white cap. Mild aroma of grains, straw, and floral hops, just a bit of yeast. Tastes earthy and floral, lightly spicy. Has a deep underlying husky grain element. Good stuff.

Bottle from Toby. Light and airy Saison. Very pale golden, small skin of tightly beaded head. Aroma is hay and light floral notes. Taste is right in the wheelhouse for the style. Very subdued.

Bottle - lightly hazy gold - nose of honey, grass, hay, melon, herbal hops, lemon cream - subtle malt texture, firm carbonation - mildly sweet, delicate malt structure, lightly estery yeast expression, some pepper that combines well with the gradually building hip bitterness and notes of grass and dried herbs - really nice.

Bottle pour at Shelton Brothers. Lovely saison-yeast nose with tons of tropical hops as it warms. Easy drinking with a clean and crisp taste on the palate. Hops are very well integrated into a traditional saison. Good stuff.
