Wild in character, a complex ale with dried fruit and clove aromas, and a satisfying dry finish. Inspired by great Trappist ales, our complex Belgian Style Pale Ale is fermented with the wild yeast Brettanomyces. Matilda pours a golden sunrise color with dried fruit and clove aromas, a spicy yeast flavor, and a satisfying dry finish.

Gold to orange colour with a nice decent head. Smells cheese, fungus, nasty feet, sour. Tastes sweet and yeasty. Light carbo, medium body.

Bottle @ Joes Tasting shared with Joes and Dutchdrebus. Hazy light orange color, small white to off-white head. Unfresh smell: sweat, cheese, sour, sweet and musty. Taste sweet and yeasty, some wrong mango or apricot. Decent carbo, low to medium body. Bad bottle?

A nice Belgian ale. Great color and aroma, very appealing color especially. The flavor however, is a little too bready sweet malt for my tastes and not enough hop zest to counteract it.

12 oz. bottle, split with manuchampions, pours hazy golden orange with a small white head. Aroma of tangerine, citrus, barnyard funk and some sour / tart fruits. Flavour is quite grassy, with citrus, sour fruits, barnyard funk, and a somewhat metallic finish. Sort of a rotten fruit / manure finish that detracts. Not bad.

Pours a rusted gold with nice fluffy head that lingers. Very slight lacing. Massive esters from the yeast dominate the aroma. Yeast provides a very chewy and full mouthfeel. Bready flavor with the alcohol present. Finish coats the far reaches of the mouth and some fruit shows late. Malt is solid throughout. Alcohol is a little too dominating.

355ml bottle. Ginger cake colour with lots of carbonation and a good head. The nose hsa initially a yeast and green herb note, then there is apple crumble. The taste seems to be initially of apples and grapes, but as the taste continues, the over-riding flavour is pineapple. The finish is pineapple sorbet in fact. The palate is very complex, it is multi-layered with great texture and a clean finish.

Bat 17, Evanston tap ($7): Pours a pretty light, reddish brown color in a Goose Island wine glass. Aroma of YEAST, malts, fruits, and a wee bit of hops. So, I like my beers to be yeasty, funky and all that. This wasn’t the extreme end of what I like, but it certainly contained many of the elements that make for an interesting beer experience. A good amount of complexity that balanced the slightly sour and funky yeast strain against the fruit flavors, sweet malts, and mild hops. ’Twas an excellent beer that attempted to do something that not every other beer does.

Hazy amber beer with a good white head. Soft palate. Sweet aromatic malty beer with a semi dry finish. Flavour is difficult to pin down. Reminded me a little of Deus but without the intense and off putting water chesnut flavours of that beer. Very drinkable.

Clear amber with a small off-white head. Aroma is primarily fruity, spicy and yeasty, but surprisingly also slightly sour. Taste is moderate sweet and also slightly sour. Lightly bitter and dry spicy finish. Vintage 2009. 180111
