Little Pomona makes cider with only two things - apples and time - and the Art of Darkness exemplifies this. A blend of mainly Ellis Bitter and with Harry Masters Jersey and Foxwhelp apples, it spent a lot of time in the dark - 12 months in tank, 12 in barrel and then six months in bottle. The result is like dawn at the end of night - bright, fresh and joyful. A juicy mouthful of apples with the texture of wet slate. Spicy. Perfumed. Peachy. Softly tannic.

Bottle pour at The London Cider House, pours a clear pale golden with a small white head. Aroma reveals red apple skins, gentle cognac, and a hint of barnyard notes. Flavour is soft and dry, with cognac, hay, barnyard notes, and gentle acidity. Finishes bone dry with plenty of cognac and tannic astringency. Interesting one.

Trockener, moderat apfeliger Beginn. Geringe Würzigkeit, leicht bitter, etwas holzig. Sehr trocken bleibend, mittellanger Abgang. 8/6/7/6/11/6

Bottle at Cider Salon, 2018. Deep golden colour, no lasting head and appley aroma. Taste is tart apple and whiskey barrel, with drying tannins. Slick mouthfeel, light to medium bodied, dry tannic finish. Nicely drinkable.
