In collaborating with Stillwater Artisanal we always focus on distinct, clear, punchy flavors. This beer is no exception. Inspired by everyone’s favorite candy, this is a chocolate bar in a bottle. Unwrap!
We’ve brewed a lot of beers with Stillwater Artisanal. Before this one, we’d done six. All sours. So, when discussing our seventh collaboration, we knew we wanted to do something different. Choice fell on a big, thick, creamy stout. So far so good, but how do we approach a stout? What, other then sourness, is it that makes a Dugges/Stillwater collaboration? Clarity and directness was what we found. Choose a path and stay on it to the end. Decide upon one thing you want to bring forward and then do it to the max. Having already decided on a stout, maxing it with chocolate was a given. We wanted a beer that was equal part childhood dessert and candy bar. Brian came over from the US, we brewed the beer and the rest is chocolate. As all things are now. Chocolate.

330 ml bottle from Secret Santa 2017, thanks to Nische for this bottle! Pours with a deep and dark brown color white a nice tan head. Very intense nose of milk chocolate and (burned) caramel. Taste is pretty sweet: milk chocolate, cocoa, vanilla, some toffee and also some nuts. Alcohol is very well hidden, long lasting finish with some roasted nuts and lots of chocolate.

11.2 oz. bottle, pours black with a tiny tan head. Nose is intense, with heaps of coconut, chocolate and light lactose - so dessert-like. Flavour is absolutely decadent, with truckloads of coconut upfront, followed by intense chocolate fudge and light lactose. There's an almost tart character to it as well. Intensely robust and bordering on cloyingly sweet. The carbonation is flat and could use some amping up in this regard. All in all, an over-the-top dessert imperial stout that is flawed due to the flatness and tartness.

330ml bottle. Pours very dark brown, almost black, with a thin tan head dissipating quickly. Aroma of sweet chocolate, cake, dark fruits, liquorice. Taste is very sweet, rich, chocolatey, very cake like, vanilla, dark fruits and liquorice, warming boozy finish. Full body, fine carbonation. A really lovely sipper.

330ml bottle. Pours pitch black with a small head. Aroma of vanilla, cocoa, chocolate, coffee, hints of syrup, roastiness, toffee and marshmallows. Taste is sweet, slightly roasty and earthy with some liquor notes, loads of vanilla, cocoa, coconut, toffee, syrup, chocolate and hints of sherry. Finish is dry and sweetish with some liquor notes, loads of vanilla, cocoa and chocolate. Interesting, quite a dessert beer.

(330ml bottle from Systembolaget) Black pour with a small fizzy dark tan head that disappears instantly. Aroma is massively dominated by chocolate bar notes, like milk chocolate convenience store candy bar style, with a nutty or biscuity character, vanilla, fresh coconut, and sweet butter caramel malt. Flavour is similarly loaded with butterscotch, milk chocolate, slightly bitter cacao, some nut/vanilla extract vibes, touch of coconut, rather sweet overall, lightly bitter into the finish. Oily medium-full body with very soft carbonation. Overall this is as clear a pastry stout as can be, the flavours are huge as intended and Dugges has learned some tricks from brewing Omnipollo beer. That said, it's also rather unbalanced, needing more roast to balance all that massive adjunct character.

There is a huge chocolate cheesecake aroma on this thing and as a cheesecake lover that's big to me. Has a modest head and jet black body. Flavour is huge chocolate sunday with Irish cream. An explosion of sweetness and flavours. As big as it gets really, executing at all levels on the tastebuds. Also has a nice and sweet mouthfeel, despite being so sweet it doesn't become overbearing. This is a big sweet beer experiment that actually pays off. Great stuff.

My goodness….floating chocolate in a beer bottle. Solid aroma and thick as oil. Sweet, but not cloying. A dessert on its own. Solid sipper by the fire. Loads of cocoa, chocolate and toffee. Well masked alcohol.
