Humulus Terreux is the type of beer that gets our stomachs tied up in knots of excitement. It’s a chance for us to experiment with both hops and yeast, creating unique, juicy & funky flavors with just these seemingly simple, earthen ingredients. Each batch of Humulus Terreux will use a different hop varietal and one of the several strains of Brettanomyces yeasts that we have incubating in our laboratory to create a one of a kind, wildly traditional bière™. The flavor possibilities are endless when combining possible hop notes of citrus, pine, flowers or grass with the barnyard funk, earth and tropics that can come from a 100% Brettanomyces fermentation. While each beer will showcase a different, distinct character, the overall result will always be dry, funky and delightfully hoppy.

Sampled from bottle @ Danish Ratebeer Gathering 2016, Ulfborg, Day 2. Hazy yellow color, average sized white head. Nice moderately hoppy, light citrussy aroma. Taste lightly malts, brett, lightly hops, a bit fruity an somewhat floral with a firm bitterness. Not bad at all.

750 ml bottle into tulip glass, bottled on 2/9/2016. Pours slightly hazy pale golden yellow color with a 2 finger fairly dense and fluffy white head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings around the glass, with a fair amount of streaming carbonation. Aromas of big lemon, lime, pineapple, pear, white grape, mango, melon, peach, passion fruit, peppercorn, cracker, bread, light honey, hay, straw, floral, grass, light funk, and herbal/yeast earthiness. Damn nice aromas with great balance and compelxity of citrus/earthy hops, fruity/spicy yeast, and light-moderate pale malt notes; with great strength. Taste of big lemon, lime, pineapple, pear, white grape, mango, melon, peach, passion fruit, peppercorn, cracker, bread, light honey, hay, straw, floral, grass, light funk, and herbal/yeast earthiness. Moderate yeast spiciness and slight tartness on the finish; with lingering notes of lemon, lime, pineapple, pear, white grape, mango, melon, peach, passion fruit, peppercorn, floral, grass, and herbal/yeast earthiness on the finish for a good bit. Damn nice complexity, robustness, and balance of citrus/earthy hops, fruity/spicy yeast, and light-moderate pale malt flavors; with a great malt/spiciness balance, and zero cloying flavors after the finish. Light-moderate dryness from yeast spiciness. Medium-high carbonation and light-medium body; with a very smooth, crisp, and lightly creamy/grainy mouthfeel that is great. Zero warming alcohol as expected of 6.3%. Overall this is an excellent hoppy Brett wild ale. All around great complexity, robustness, and balance of citrus/earthy hops, fruity/spicy yeast, and light-moderate pale malt flavors; very smooth, crisp, and refreshing to drink. A very enjoyable offering.

Bottled 5/18/15, drunk 7/23/16.
Small white head shows moderate retention. Golden. Clear.
Fruity, lots of brett and also a ton of dough. But theres no alcohol or clove. Very peppery however. Ok maybe there is some clove and white pepper.
Softly malty and good attenuation, not terribly sweet. But super floral and intensely spicy. Light breadiness doesnt really help in the face of all this dry, perfume. Light tartness, touches of lime and very light band aid.
