Beyond Good and Evil is one of Nietzsche’s most powerful works, challenging convention, ‘wisdom’ and ‘morality;’ urging us to transcend the restrictive, bounded concepts of good and evil; and confronting the relative nature of ‘knowledge.’ This both informs and inspires our work. Beyond Good and Evil is also the name of our bourbon barrel-aged maple imperial stout. Brewed in December of 2016, we crafted this beer with malted wheat and Vermont maple syrup. It then rested contentedly in hand-selected bourbon barrels from one of our favorite distilleries for nearly two years.

Thanks Virby44 for sharing! Wine glass showing dark brown with sparse latte colored foam. The nose shows intense notes of dark chocolate and balanced notes of maple. The palate is lightly carbonated and full bodied with an oily slick mouthfeel. Lightly sweet with balanced flavors of maple syrup, bourbon, and dark chocolate with a lot of maple syrup and graham cracker on the finish.

Old rate. Dark brown, just a touch of inkiness. Not much head. The aroma has a little soy sauce, just a touch of chocolate. Brown sugar, a touch sticky, quite sweet with nice bourbon notes. Again, quite soft and balanced. This has a mellow maple note, and a bit of wood. Complex and balanced.

(Sample on tap @ Warpigs HF Day, Copenhagen, May 12 2016) Pours black with a small tan head and no lace. Aroma of bourbon, molasses, sweet chocolate, lots of maple, toasted coconut and raw sugar, quite sweet overall. Palate is chocolate and maple syrup-forward, with oak, moderate bourbon notes, and a bit of roasted grain and coffee grounds helping to dry out the finish. Full but soft and smooth in the mouth, with light carbonation and little alcohol heat. Big rich fudge-like dessert stout but not so hard to drink, lovely.
