The inception of this funky babe began in February '17. With a menagerie of local grain & aged hops, we constructed a unique yet traditional Flanders-inspired beer. Sent into our 8Bbl foeder for primary fermentation atop second use cherries, FTS fermented with our mixed house cultures & chilled out. FTS was transferred into third use bourbon barrels with Defiant Whisky soaked oak spirals injected into the barrels. Here it slumbered further.

Meanwhile, we brewed up a clean brown ale ultimately meant for blending into the already aging beer to cut the acidity & provide a nice caramel body. We then blended into a fruit receiving tank with loads of local roasted figs. This blend went back into wine barrels for further maturation.

On tap at Sovereign, pours a hazy orange with some thin white head.  Boozy nose, figgy, raisins, spice. Flavor has some tartness, more unripened grape than vinegar, dried fruits, grist, spice. Finishes tart, oily. 7 4 7 3 12

Bottle shared at Lucky Bamboo. Thanks Aaron and Anna! Pours a clearish copper with a finger of white foam that dissipates. Balsamic aromas with oak, tart cherry and vinegar notes. Some funk and musty cherry as it warms. Acidity has bee reigned in a bit with age, but still fairly acidic, especially for Fonta. Lingering cherry stone, balsamic vinegar and oaky vanilla. Not bad.

Bottle thanks to Rainer. Gusher. Pours a cloudy amber with medium off white head leaving spotty lacing. The aroma is leather, oak, funk. Medium body, oak, leather, light tartness, dry finish, very good.

Soured cherry and balsamic. Cloudy copper with a decent white head. Soured cherry, light balsamic and a huge hit of acidity.
