Brewed in collaboration with our friend and noted Fermentation expert Sandor Katz. A smokey tart sour pale wheat ale brewed with Beechwood Smoked Bamberg malt, soured and fermented in stainless with bacteria from Sandor Katz fermentations and Yazoo house lactobacillus blend.

12 ounce bottle from Toski-Sands, 7/17/21. Hazy orange, thin fizzy white head, poor retention. Aroma of hammy smoke, vanilla, citrus. Taste is smoke, citrus, pineapple, stone fruit. A bit thin, lingering smoke. A great beer for smoked beer fans. Well balanced between the sour and smoke. Nice beer.

Bottle: Clear, amber/gold with a white head. Smoked ham, honey aroma. Taste is salty, smoked meat, sour wheat malt. Tart and lactic. Very good.

Smoked meat, sour milk, bready malt, and hay aroma. Dark yellow with minimal head. Sweet-tart lemon/lactic acid, smoked ham, biscuit malt, and mildly bitter hay flavor. Good body.

Bottle sample at a tasting at troubles' place. Thanks troubles. Slightly hazy golden. Smoked sausages, lacto, tart, citrus. Very nice.

Bottle from Red Wine & Spirits. Pours a clearish, deep gold with a finger of foam that lingers . Light smoked bacon, ham hock and slight cured meat aromas. A touch of tartness. Light lemon, berry and smoked meat on the palate. On tap at Yazoo. Slightly hazy golden with small white head. Aroma is smoke, light body, low carbonation, and little lacing. Taste is smoke and tart malt.

Nice smoked sour, tart and acidic yet with a semisweet toasted grain middle and a smokey back end to add depth. Starts with swipes of lemon and green apple, then gets a modest cereal sweetness before the charred finish kicks in. Nose mixes wet burnt paper with grassy undertones. Appearance is okay, a bright clear gold but lacking much foam or lace. Tasty, though, and the bright, boisterous texture keeps the smoke from overpowering the lighter notes.
