Kvass with Bread from Jester King Kitchen
In February, Head Baker Amanda Loadman baked 300 pounds of rye bread with local grain from Barton Springs Mill for the brew. Our bread dough was fermented with the same mixed culture we use to ferment our beer. We then added the bread to the mash along with Munich malt and local Pilsner malt from our friends at Blacklands Malt. We fermented the wort in stainless steel with our mixed culture of brewers yeast and native yeast and bacteria, and naturally conditioned the beer in bottles and kegs.
Brewing Kvass with bread we baked in-house was a special milestone for us, and we really hope you enjoy the results!
Kvass (batch no. 3) is 3.9% ABV, 1.001 specific gravity (0.25 Plato), 31 IBU and 4.2 pH.

Hazy to cloudy dark blond colour, dull. Moderate acidity, light spicy rye, touch of citrus peel. Slightly salty.

Bottle at the Beer Temple in Amsterdam. Juicy golden color with a minimal white foam lowering pretty fast. Nose: bready aroma, a bit sweet lemon aroma with a hint of honey. Mouth: the aftertaste is extremely citric and comes back arrogantly. Clean drink with a firm citrus overall. Not a Kvas in my book but tasty and peculiar.

Draft at BeerTemple, Amsterdam. Hazy golden with a white head. Aroma of brett funk, citrus, lemon and green weeds. Flavour is above light sweet, bitter and light to moderate sour. Light to medium bodied with soft carbonation.

Taster shared with Alex. Appearance: hazy pale golden with a white head. Aroma: a bit fruity with some elegant malty notes. Taste: similar. Overall: nice and refreshing with a light fruity character. Of course, it has NO similarity to a real kvas at all.

On tap. Pours amber with light head. Aromas of yellow fruit jelly and light grapes. Flavors of bready malts and slightly tart grapes. Not too impressive but ok for the ABV

Bottle shared at Andrew's B-day Bash. Pours a clear, light copper with a finger of beige head that lingers. Bready aromas with rye seed and faint ryeberry notes. Lightly tart with a sour dough character amongst more seed and wild grainberry notes. Some light sweet bready notes with lingering light funk on the finish.

At the source: pours light brown with a whitish head. Aroma is yeasty, bready funk. This is not a Kvass... not by any stretch. I am a slav and this is not a kvass. Seriously, not kvass. I have had beers that taste like kvass and this ain't one. In any case it is a perfectly nice sour ale.

Bottle at Jester King, pours a cloudy dark amber with a small white head. Aroma brings out freshly baked rye bread, lots of bread crusts, and rustic farmhouse yeast. Flavour is very bready, with tons of rye, crusty bready and wild yeast. Earthy and pleasantly bitter, with a rustic finish. Wonderful.

Hazy amber color frothy white head. Smells like Latvian rye bread with juniper berries. Low hops and malty, and sour nose. Sour, light body, lots of rye of juniper. I think it’s fairly drinkable but probably not to everyone’s taste.

On tap at Jester King. Pours a cloudy orange gold with medium off white head that lasts. The aroma is funk, yeast, dough. Medium body, funky, pepper, dough, light finish, very good.
