Dreams of Yesterday is our very special, one-of-a-kind oyster pils collaboration with Bearded Iris Brewing (Nashville, TN). A portion of proceeds are donated to Billion Oyster Project, an incredible local organization whose mission is to bring oysters back to the NY harbor while educating kids on the value of climate health. This beer aims to bring terroir to an ordinary pilsner. (Yes, terroir applies to beer too.) NYC has clean, simple water, which in turn makes our lagers soft and clean. We manipulate the minerality of the water profile with oyster shells, rather than with hops, grain, and yeast.

That's right, oyster shells. Packed with calcium carbonate, salinity and oceanic flavor, the shells are added to the end of the boil. (Our staff earned the pleasure of consuming the oyster meat). Those familiar with our lager profile may notice more salinity on the palate in this beer; everyone who enjoys it will consider it balanced and drinkable. It goes without saying that this is an ideal beach beer. Hopped with German Hersbrucker and German Saaz and fermented with our house German lager yeast before lagering cold for 7 weeks.

Aromas are malt, dry grain, a little hops and saltines. Flavors are similar to nose, slightly more sweet than bitter but great balance overall. Clean and refreshing. Easy to drink more of these. Nice.

Can at home from Crafted. Clear golden lager with puffy white head. Nose is minerals and honey. Tastes of honey, crackers, spicy peppery hops, minerals, herbal. Light bodied and crisp. Pleasant creamy mouthfeel.

16 ounce can from Tavour. Bright medium gold color. Frothy white head. Subtle grainy malt aroma has floral hop notes. Flavor is light and refreshing. Light biscuity malt and herbal hops upfront. Quite dry overall. Some minerality as well. Crisp, dry finish.

Clear deep brass. Fluffy, white head.
Yeah, that's rich with mineral, not particularly extra saline that I would guess, but clean and well-lagered with light floral, heavily herbal hops that are dainty and bright. Surprised how much mineral there is and how it doesn't create any blandness whatsoever.
Hoppy and malty with good attenuation and a rich, honey-dense mouthfeel. Again, I wouldn't guess extra calcium carbonate here (obviously) and wouldn't call it highly or extra saline, but it's certainly a lovely mineral character with fresh herbs from the hops and clean, rich, honey-like malt. Lovely stuff.

Sad that beer tickers don't appreciate the greatness of this and other top tier pilsners.

On tap at the brewery. Pours gold. Apricot, peach, lemon, grain, white bread, herbal notes. Medium body. Outstanding.

Can at the Franklin ave location: pours golden with a white head. Aroma is grain and minerals. Light bitterness, salty hint, and biscuits.

Can at Bearded Iris during CBC. Drank straight from the can. Grassy hops, nice bready malt aromas with an underlying briny seashell character on the nose. Brine comes out more on the palate, crisp and clean malt with some seaweed brine on the finish. Really crushable and super fresh with a lingering umami. Sampled from the tap at As Is. Pours a clear light yellow with a white head that dissipates to the edges. Aroma has grains and crisp grass with a touch of oyster underlying. Flavor has straw and hay with a grass bite and a hint of oyster.
