200 years ago Porter was brewed in London in huge quantities and aged in enormous wooden vats. During this aging the beer would undergo a secondary fermentation by the wild Brettanomyces yeast present in the brewer’s yeast and on the oak. These porters were often made with malt that had picked up a smokey flavour during the malting process and aging helped to mellow this out the beers acrid nature. This is our interpretation of that style of early ‘stale’ Porter. We have used a proportion of smoked malt and it had been aged in barrels previously used for mixed fermentation beers. The result is a slightly sour and mature Porter with a balance of sweet malt, bitter hops and a smokey finish. We believe the original beers would not have been as sharp as our version as ours was aged much smaller vessels and therefore had a much higher exposure to Oxygen.

(Bottle @ Salt Horse, Edinburgh, June 24/19) Pours very dark brown with a tiny tan head. Intense sour dark fruit (plum, sour red grape) up front, quite smoky, fairly heavy horseblanket funk, dusty leather, moderate roast, some ash, sweet vinegar twang, lactic as well, slight metallic edge, moderate plus sour finishing drier and dustier with oak, smoke and burnt grains and balsamic edge. Light to medium bodied, nearly flat. Interesting to try for sure, not really my style but splitting a bottle was worth it.

Bottle from Salt Horse. Pours black with a thin tan head. Aromas of brett funk, light sour, light smoke, light roast. Taste is vinous, flanders red quality to it almost. Some chocolate notes, tangy sour finish.

On keg at the Hanging Bat. Appearance - opaque black with a nice crema head. Nose - chocolate, smoke and sour lemon tang underneath. Taste - sour note again which underpins the chocolate smoky notes and gives it good length. Palate - medium bodied and tangy. Nice linger. Overall - very nice. And very interesting.

Keg at salthorse. Pours deep ruby, nose is toffee, raisins, roasted, taste is juicy dark fruit, tart, burnt malts, chewy toffee.
