What could make our Cavatica Stout even better? Bourbon! We let our house stout sit in Four Roses Bourbon Barrels for several months. There in the dark, bourbon-enriched barrels, the beer soaked up as much bourbon quality as it could before we sent it off to the bright tank. With an up-front bourbon taste backed by our dark, malty stout, the Bourbon Barrel Cavatica is a deliciously potent brew that demands a taste.

Draft @ Shelburne Inn, Seaview. Dark brown with a big head. Big bourbon nose with lots of chocolate, sweet and with a touch of syrupy richness. Nicely balanced and with a nice balance.

Red wax-dipped bomber. Aroma is strong in bourbon; also, dark fruit, raisins, wood, brown sugar, vanilla. Pours opaque black with a thick tan head with great retention; laces a little. Taste is woody, a little tart, alcoholic, licorice, dark fruit. Body is a little thinner than expected. A little too woody and boozy for my tastes. Still, not bad.

Bottle from Mongers. Pours a ruddy black color with a small beige head. A big sweet nose, vanilla and oak. Huge sweet bourbon, vanilla, toffee, burnt toffee, dark fruit, berries, chocolate. Hot bourbon. Light astringent oak and heavy whiskey. Damn good. This is aged in Willett barrels according to the bottle. Awesome beer.

Bottle - Dark roast, sweet bourbon, wood notes and some boozy burnt notes. Deep jet brown with a nice brown head. Woody dark roast, bourbon notes, dark chocolate and a long finish with a touch of coconut. Some fruity notes pop up as well.

[3/1/15] Draught at The Beer Junction in Seattle. Black with a tan head. Aroma of chocolate, bourbon, vanilla and alcohol. Sweet flavor with chocolate, bourbon, vanilla, some fruitiness and some booziness. Rounded mouthfeel. Too boozy.

Tap at APEX, Portland - 06/11/12. Mid black with a thin tan head that soon clears. Nose comprises wood tones, chocolate, roast malt, bourbon and dark sweet sugars. Taste follows nose with more bourbon, wood, chocolate, molasses, leather. Medium to full in body with light carbonation leading to a boozey bourbon inspired finish.

Draught. Barrel is in the aroma. Rather like Wild Turkey Bourbon. Full bodied with much roast, some vanillin and cocoa and coffee. Full finish, I’m glad I tried this

On tap at Apex in Portland, split with Matts_Property, pours black with a small tan head. Aroma of bourbon and chalk. Flavour brings out the bourbon strongly, followed by vanilla and some booze. This is a bourbon bomb. Not much of the original stout left. Solid, but the bourbon is overburdening.

Sample at the brewpub, part of Stout Month. Pours black with a thin off-white head that disappears quickly. Spotty lacing on the glass. Aroma of bourbon, vanilla and malt. Full, smooth body with flavors of oaky bourbon, dark malt and vanilla. Mild dark fruit notes as well. The finish is bourbon and malt with a dark fruit aftertaste. Decent overall.
