L’hydromel Demi-Sec (15,5°) : est un peu plus sucré que le sec, mais pas trop. C’est un juste milieu entre le sec et le doux.
Vous pouvez le boire tel quel frais (8°, 10°) sans glace.
Mais vous pouvez aussi le boire en kir accompagné de crème de cassis ou en cocktail avec du whisky, de la bière, du cidre ou même du jus de pomme.
Il accompagnera parfaitement vos poissons et vos fromages.
Vous pourrez parfumer vos plats, en l’utilisant pour déglacer des viandes ou des poissons.
La couleur de l’hydromel et le millésime peuvent varier en fonction des lots.

Vintage 2008. Bottle pour from fiulijn, pours a clear golden. Nose is full of beeswax, honey nectar, and intense booze. Flavour is very boozy, with lots of beeswax, honey nectar, intense alcohol, and sweetness that is well-contained. Solid.

Poured from leftovers (thanks fiulijn). Assuming this is leftovers from 2013 of the 2008 vintage. Clear blonde gold with no head. Honey, boozy, oxidized, okay.

The yellow shade is less bright than in the Sec; there is a thin sediment in the bottle. The aroma is mild, with more complex and less flowery honey than the Sec, and an impression of rubber. The mouthfeel is semi-sweet, soft and elegant; it has a good honey profile, not too flowery, reminiscent of late summer fields; the bitterness feeling is very subtle; it has a pleasant alcohol warmth.
