Dark Matter was brewed by BrewDog Shoreditch & Beavertown Brewery.

After formulating a massive, eclectic list of suggestions from the staff, including a Spiced Salt Beef Bagel Beer (?), our Shoreditch crew headed to Beavertown to discuss the beer with them. With sour beers having a massive effect on the UK craft beer scene this year, they opted for something that was ‘on-trend’ but also unpredictable: a Berliner Sour Stout. The brew was very different to anything Beavertown had done before and was a real challenge - it ended up taking 3 days to go from the mash to fermenter.

Draft at BrewDog Camden on 19 October. Poured a cloudy dark brown colour with a thin halo of off-white head. Sharp cherry aroma mixed with cocoa and molasses. Tart fruit flavours with roasted malt and a slightly salty, soy sauce hint. After a few seconds a sudden burst of sweet chocolate kicks in with brown sugar and some residual balanced tartness. Can’t think of any beer I’ve had that tasted like this... probably not to everyone’s taste, but I liked it.

Keg at BrewDog Shoreditch, London during the big collaboration release day event. Pours black with a fine, foamy off-white head. Certainly sour with licks of metal, cocoa and iodine. Odd. Some blood sausage. Tangy dark fruits. Weird but OK, it works in an experimental way.

Keg at Brewdog Bristol - looking forward to this as I missed it at the Edinburgh shindig. Did not disappoint. Jet black pour with a thin, long-lasting head. Aromas of a good roasty stout paired with sour fruit and a lactic note too. Big sour taste that is initially quite shocking, as I expected it to be toned down by the dark malts, but you get used to it quickly. Creamy texture, lively carbonation, long finish. Tastes like a bigger beer. Really good.

Very dark brown. Disappointingly little head. Aroma The malt tries to rise above the sour funk, only successful after repeated sniffs. Taste overpoweringly sour at first, then the sweetness takes the load off. Finish is salty, like offal and marrow. I struggle with sours, but this was an excellent brew.

Keg at Brewdog shoreditch. Hazed opaque black caramel. Aroma is sour cherry with light stout roast. Flavour is crisp sour cherry, hint of mouldy chocolate. Light body and dry finish. I’m not mad keen on this.

Keg at BrewDog Shoreditch. It pours near black with a minimal head. The nose is pickle, smooth roast, toast, tangy fruit, sour berry, jam and cocoa. The taste is tart, tangy, pickle, toast, Granny Smith apple, sherbet, lactic, yoghurt, mouth-puckering tartness and balsamic vinegar with a tart finish. Light body and fine carbonation. Really tastes like pickle! Very drinkable.

Keg at brewdog... Deep black... No head... Woody sour... Tart vinegar... Really... Nothing but light charcoal and vinegar
