For Carnival Brettanomyces 2018 (our favourite beerfestival) we invited German homebrewer, beer historian and yeast-maniac Benedikt Koch of Wilder Walt to brew something outrageous. We decided on a Lichtenhainer, with a funky twist.
Lichtenhainer is a historical German style, originally a slightly sour pale beer brewed with smoked malts and soured with lactic acid bacteria. We used Mud King, an ever evolving blend of wild yeasts and bacteria, for fermentation and then added peach puree to it. It is dry, fruity with subtle peachy and smokey flavours. Crazy, yet delicious!

Bottle. Color: Hazy yellow golden, white head. Aroma: Saison yeast, fruity, smoke hints, light sourish. Taste: Moderate sour, fruity white berries and peach notes, light notes of smoke, smoked meat, funk notes. Earthy notes. Light to moderate sweet and very lghtly bitter. Under medium body, below average carbonation. Some complexity, rather strange combination of pretty subtle flavours but it works fine for me.

Sampled from tap at Van Moll Fest 2018. Hazy, yellow with a white head. Slightly sweetish, sourish, moderately smoky aroma of lemon, rhubarb and smoked eel. Minimally sweet, medium sour, gently smoky and slightly fruity taste of lemon, rhubarb, some vinegar and smoked eel, followed by a short, medium tart, fairly dry finish. Thin to medium body, quite astringent and slightly effervescent mouthfeel, soft carbonation. Nice, a bit too sour maybe.

Draft @ Schuim (Carnivale Brettanomyces 2018). Cloudy yellow color. White head. Aroma's; smoky, light sour. Retronasal it's sourish, smoky, tar. Flavor is moderate sour, light moderate sweet. Light bodied. Short finish.

Draft at Carnivale Brettanomyces ‘18. Fairly hazy pale golden with a white head. Aroma of herbs, floral notes, woody notes, smoke, citrus. Really strange. Flavour is moderate sweet and light sour. Medium bodied with soft carbonation.

Brettfest. Schuim. Hazy golden with white head. Massively smoked sour grain, fishy crabshell touch. Very weird combination. Powerful aromas but clashing aggressively. Moderate sweet, salty, umami and sour. Medium body and soft carbonation.
