Time and Place is the purest expression of the native yeasts in our cidery and on our fruit. It is bright and tart, a blend of apple and wild yeast acidity. Long ageing on tannic apple pomace coaxes out quiet tannins and ripe orchard aromatics. Restrained yet elegant, it is the cider we've always wanted to make.

First American rate. Can via Press online. Solo cup at home post hurricane. We still don't have potable water. Mostly clear, pale gold, quick fizz. Initial foul, farty sulfur nose. Field funk, yeasty, apricot, bittersharp apple, saline, light floral nose. Semi-sweet, bittersweets with lots of sharp contrast. Yeasty, lemon, hairy, dense sulfites, a little greasy, low carb, middling abv, slight vinegar finish on the tail. Odd vanilla from nowhere. Speaks to keeping it natural but unseasoned production. Aside from the nose it's okay.

Aus der Dose im 2023-11 getrunken. Diese Farmhouse Cider kommt sehr klassisch daher. Das Apfelaroma ist herb und weniger süß. Der Säuregehalt ist eher schwach und ein recht kurzer Abgang.

(On tap @ Paradise Grapevine, Toronto, Sept 27/19) Pours clear straw gold with a small white head. Notes of bright zippy zesty apples with a little citrusy twang, light acidity, dusty sort of farmhouse yeast vibe, lightly leafy/herbal quality, bit earthy into the dry finish, fairly crisp with a hint of tannin and funk in the aftertase. Light bodied, average plus carbonation. Nice balance here, good blending and not a particularly overbearing funk; this is obviously a lot less complex than a number of the Revel products but as a base it's excellent as a dry cider.

Can, no idea which vintage. Rather clear pale yellowish color with no head. Aroma is green apples, quite funked, leather. Taste is funky green apples, custard, leather. Sparkly carbonation, dry finish, mineraly. Good!

Can shared in train, thanks to Maakun! Sour apples, bit of that powdery dry baking yeast vibe, nutty, tannin dry. Quite strong wild, near gluey sour, moderate bitter. Can from Bierkoning, shared on the train home. Can looks nice? Tart apple, soft funk, dry apple peel, earthy dry apple, soft berries and leaves. Under medium tart and bitter, light sweet. Almost medium bodied, over medium dry. Nice.

355ml can. Pours a clear pale straw colour with a thin, fizzy, short lived, white head that fully dissipates. Aroma of funky yeast, tart green apple skin and oak. Semi-sweet flavour of funky yeast, green apple and oak with a dry, tart, slightly acidic finish. Light body with a watery texture and average carbonation. Nicely done.

Very pale colour, cloudy. Lots of chemicals and glue, light apple aroma, very dry mouthfeel, bit of lemony character, short finish. Simplistic and boring cider.
