Gedurende de koude winternachten hebben wij de wort in ons koelschip teruggekoeld.

Wilde gisten en bacteriën die in de lucht aanwezig zijn, enoculeren de wort
’s nachts en starten de fermentatie.

Deze spontane parel heeft 12 maanden op witte wijnvaten gerust en daarna nog 4 maanden op een flinke lading verse granaatappelpitten.

Dit resulteert in een goudblond bier met een licht funky wijnkarakter. Het bier heeft een kruidige smaak met een fruitige body.

Bottle. Color: Slightly hazy golden, thin white head. Aroma: Vinuous, fruity, bit tart. Taste: Fruity white grapes, wry grape seed, hints of tropical fruit, floral / herbal hints, some wet dog funk. Vinuous, dry mouthfeel. Moderate to over moderate tart, moderate sweet and light bitterness. Long lasting dry fruity finish. Medium body, below average carbonation. Well balanced, nice complexity. Nice one.

Hazy golden orange with a ring white head. Aroma of citrus, oak and light funk. Flavour is moderate sweet, bitter and sour. Medium bodied with soft carbonation.

Sampled from bottle at De Koffer. Bit hazy dark golden with small head. Quite some white wine, sour grains, dull grain husks, soft funk, dried fruit skins, berry pits, light earthy and a touch of grapefruit. Medium sour, under medium bitter and light sweet. Over medium bodied.

Tap at Arendsnest. Unclear dark golden with white head. Sour grapes, warm bit poopy funk blanket, fresh grape sour pits, long fruity grape notes ending in concentrated muscat, floral touch, oxidized grapes, quite some raisans, cork, dry and wry.
