Luckily, we’re not short of ramen-heads in the office and to top it off we knew there were two more of New York’s biggest ramen fans heading into Leeds at just the right time; Kevin and Basil of Finback Brewery. We dropped them a line and set about putting together this yuzu IPA, a fruit synonymous with this Asian cuisine.
To complement the sharp, zesty nature of the fruit we wanted a base which was fluffy and rounded but still light enough to contribute to a refreshing drink. We went with pilsner malt and a large portion of wheat, backing them up with small portions of flaked wheat and oats for the base. The idea behind this was to put together
a malt profile reminiscent of the Wit-style but that still had all the soft character that would be expected of a Northern Monk - Finback IPA.
We fermented with our house IPA strain and added yuzu juice at the back end. Finally, we dry-hopped with Citra and Mosaic, generously but not high enough to mask the unique flavour of yuzu.

Can. Wine Rack, Sharrow, Sheffield. Straw gold. Light haze. Thin swirl of white. Nose has yuzu. Floral toilet cleaner. Lemon and lime. Some mango. Bready malts. Taste is a little sweet, with a clean, tangy bitterness. Medium body. Low carbonation. A tad drying. Sharp bitterness to finish. Ok, albeit a bit one dimensional.

Keg at the merchant Canary wharf. A light hazed yellow straw coloured pour with a a frothy pure white head. Aroma is lovely fragnant cittus, orange, apricot, lychee, little grass, bready grains. Flavour is composed of tangy citrus, orange rind, juicy fruits, sharp orange juice, bready grains. Palate is semi sweet, sharp, moderate frorhy carbonation. Tasty.

Can from Cotteridge Wines; hazy golden yellow pour with a bubbly off white head, aroma has lemon meringue and pine, taste has light spice, some green tea, citrus in abundance.

440ml can. Hazy golden orange, white head. Aroma of citrus fruits, yuzu. Taste is citrusy, orange, grapefruit, yuzu... not as prominent as I expected. Medium body. Refreshing but a somewhat standard IPA.

Green City: pours hazy with a white head. Aroma is citrus and fruitiness. Same basic effect: loads of citrusy flavor from the yuzu coupled with very citrus forward hops.

Hazy yellow gold beer, small white head. Light palate, mildly dry, decent fine carbonation. A light floral citrus, some pine, a little grapefruit. Light finish. That's it! Fuck me! What a disappointment! Where is the yuzu, on stilts apparently! The hops are wearing wellies. I enjoy most of the Northern Monk output but this is a crushingly average beer from them. BORING!

Draft. An unclear yellow beer with a lazing white head. The aroma has notes of lemons, petroleum, hops, and malt. The flavor is sweet with notes of petroleum, hops, spices, mango, and malt, leading to a bitter finish.
