One third of the wort used to make this splendid stout came from each of three North Carolina Breweries: Olde Hickory Brewery, The Duck-Rabbit Craft Brewery, and Foothills Brewing.

These were combined and aged in very rare 23 year old bourbon barrels. Olde Rabbit’s Foot Imperial Stout is rich and complex; as satisfying to drink as it was to make. We three craft brewers hope you will enjoy the very special Stout as much as we have.

Brewed with honey and with cocoa nibs added and aged in 23 year old Pappy Van Winkle barrels.

Bottle shared at Lucky Bamboo share. Pours a thick, dark brown to black with a finger of beige foam that dissipates. Big dark chocolate cacao nib aromas with fudge brownie, light vanilla oak, coffee and toasted coconut. Great, thick body with roasty cacao bitterness, coconut, bourbon and rich chocolate brownie notes. Lingering chocolate, coconut and vanilla and bourbon. Bottle, 2013 vintage. Pours clear black, medium tan head, dissipates to a large ring with good lacing. Aroma is bourbon, cocoa, vanilla. Flavor is light plus sweet, medium bitter, loads of bourbon. Base beer has faded out unfortunately, leaving a ghost of cocoa behind. Medium body.

22 oz bottles of 2010 and 2011 side by side. Aroma is rather licorice forward with nice dark chocolate and roast notes. The 2011 has much richer chocolate notes. Hints of alcohol. Moderate amount of oxidation in the 2010 bottle with cardboard being most prevalent, but also some dried fruits like raisin. Both bottles poured black with dark brown hues. Moderate sized, mocha head with nice retention. Flavor has moderate roast notes with a nice large chocolate flavor. 2010 bottle had moderate dark fruit and some oxidation which the 2011 bottle did not have. Light alcohol and oak notes, but not much bourbon character. Hints of honey. Mouthfeel is medium full bodied with medium carbonation. Low astringency and medium low alcohol warmth. Overall, the 2010 bottle had faded quite a bit but 2011 was still drinking nicely. Really rich chocolate flavors and aromas with light honey character. Rating is for the 2011 bottle.

2009 version shared with the tasters choice crew. Thick black heavy oak and bourbon with nice coffee and chocolate undertones. Fantastic beer!

Midnight black, alcohol legs, minimal head. Smells amazing. Incredibly sweet. Loads of vanilla and brown sugar with cane sugar. Very decadent like a chocolate mousse pie. Taste is extremely sweet. Muted bitterness, very little booze. Vanilla is prevalent with tons of smoky charred oak. Very nice but not as bourbon heavy as I expected.

22 oz. bottle, sent from Pabobcat (thanks a lot, David), pours black with a small beige head. Aroma is very complex, with moderate bourbon, cocoa nibs, an vanilla - the bourbon quality is what amplifies the complexity. Flavour is extremely complex, with lush, deep bourbon barrels from the Pappy Van Winkle barrels, cocoa nibs, a touch of vanilla, an low-to-moderate sweetness. Quite rich and deep, with extremely high complexity. Fairly medium bodied for a big BA impie stout, though very full flavoured - could use some more body but that is a very minor complaint. Really reminds of Goose Island Rare BCS, as that's the only other Pappy barrel stout I've had thus far, though this one isn't as complex. A most fantastic, highly complex sipper.

Sample at the Central OH BA Tasting at From The Vine on 06/02/2012: The beer pours black with a medium light brown head. Patchy lacing on the glass. Aroma of bourbon, vanilla and coffee. Rich body with flavors of mocha, bourbon, vanilla and roasted malt. The finish is roasty with a boozy cocoa aftertaste. Good beer all around.
