The unsung heroes, the foot soldiers of the revolution. We owe a huge debt to the billions of tiny yeast cells that work tirelessly to ferment sugars into alcohol and CO2. But yeast isn’t just here for the grunt work. Yeast has the power to change the flavour, aroma and complexion of your beer in an instant.

This series is designed to showcase the impact different yeasts have on the same base beer. This series of 4 beers gives the limelight to four totally different yeast strains: Belgian Trappist, Pilsen Lager, American Ale and Bavarian Weizen. All 4 beers have been brewed to the same ABV using a blend of Centennial and Amarillo hops and a backbone of Pale Ale, Munich and Cara Malts.

Flaska från SB. 1 av fyra i jästexperiementserien Unleash the yeast. Citrus, tropisk frukt och tydlig jästkaraktär med lätta bananvibbar. Tydlig beska men inte så stor fruktig i smaken utan mest karamell, jäst och grapebeska. Känns lite obalanserad och småtrist, men funkar.

Bottled. A hazy golden beer with a white head. The aroma has notes of banana, straw, and malt. The flavor is sweet with notes of bananas, malt, and wet hay, leading to a bitter finish.

33 cL bottle. Pours hazy orange with a small white head. Aroma is toasted malty and light estery. Sweet, fruity, estery and light banana. Mild bitter and dry estery finish.

Small yellowish head over veiled, but bright orange beer. Coloured, toasted malts. Plus some non-debatable fusels, if still a long way from the classical clove/banana a Bavarian Weizen would really sport. But they are there, as are some archide-fatty acids. Bitter, outspokenly hoppy, resiny, going over towards metallic. Grapefruitpeel. Severe bitterness, dry - a Weizen would be much fruitier, carrying a wheat-induced acidity in flavour, totally absent here. Seems quite fermented out, too. Seems medium bodied all the same, feels well carbonated, quite slick. The difference with the other yeasts is proven. The Weizen character not, not in the least because of the hopoverdose for this kind of feature.

Duft av citrus, banan og karamall. Dunkel gulbrun farge. Lite skum. Frisk smak av citrus og karamell.

Bottle. A lightly unclear beer, golden in color and with some microfloaties. White head. Some banana and cloves in the aroma, aa well as alcohol, making me think of a cheap, strong euro-lager. The flavor has pale malts and fruits, the sweetness balanced by bitterness. Medium body, quite fizzy. Neither interesting nor very good this one. And not much weizen-ish either. 140307

Smak och doft av humle, malt, citrus, jäst, karmell, grön banan, grapefrukt med toner av röda bär. Fruktig, frisk med tydlig beska med smak av grapegrukt.

On tap at Brewdog Shepherds Bush. Hazy orange gold colour. Not much of a weizen. Lots of sweet toffee not huge on the esters. Ok to drink but not really to style

Bottle from Systembolaget. Clear amber with a medium white head. Aroma and taste of light banana, some spices, toffee and earth. Fairly hoppy and bitter. Drinkable.
